HOMEMADE SCHEZWAN SAUCE RECIPE



Hi... Today I'm going to share another basic recipe, that is schezwan sauce recipe. If you want make any Chinese schezwan recipe you need this basic ingredient to make any recipe like schezwan chicken,schezwan noodles, schezwan fried rice etc., I'm going to share all the above recipes in my blog. But yesterday used this homemade schezwan sauce to make spicy shezwan chicken. If you have a jar of schezwan sauce in your hand you can easily make the above recipes. Though this sauce is easily available in market but trust me This tastes 10 times better than store bought jars.

Ingredients :

Dried red chilly : 30
oil : 4 to 5 table spoons or 1/2 cup
Vinegar : 1 table spoon
pepper powder : 1/2 tea spoon
soy sauce : 1/2 tea spoon
salt to taste
Sugar : 1 tea spoon
Finely chopped garlic : 1/2 cup
Finely chopped ginger : 1/4 cup

Method :

First take out the seeds from chillies and soak them in water for 30 minutes.

Now drain water and keep drained water a side

Now take red chillies in blender blend for few minutes then add water and blend it to a smooth paste.

Now heat oil in a pan add garlic and ginger saute till garlic turns golden color.

Now add chilly paste saute for few seconds then add all remaining ingredients and cook on low flame flame for 5 to 7 minutes by stirring in between 

When oil floats on top remove from fire and let it cool completely and store in air tight container.

Note : if you want to store this for 1 month in refrigerator add 1/2 cup of oil.

You can use this sauce in any schezwan recipes as per your taste, because it is very spicy. 

If you want less spiciness in schezwan sauce use Kashmiri red chillies. 

Remove seeds from red chillies

Soak it for 30 minutes

Blend it

Add some water

Blend it into fine puree

Heat oil add garlic

Add ginger

Saute for a while

Add chilly paste

Stir it

Add vinegar and soy sauce

Add salt,sugar and pepper powder

Cook on low flame

It's done now

Schezwan sauce is ready to use.
