RESTAURANT STYLE GALOUTI KEBAB RECIPE



I love making kebabs and tikkas . They tastes really delicious when you make them at home. Today I'm going to share an awesome galouti kebab recipe. Galouti kebabs are made with minced mutton, gram flour and other flavorful ingredients. I gave Smokey flavor to give a restaurant touch. It tastes really really yummy.

    though it takes some time for preparation, but cooks in very less time and the result will be awesome. If you want to arrange any party at home you can serve this as a starter.  mix all ingredients then give it a smoke then cover with cling wrap or lid and keep this in refrigerator. That's it whenever you want you can make them. If you want to make for other day just put the bowl in freezer and bring it to room temperature then fry them and serve.

Ingredients :

Finely minced mutton : 500 grams
Gram flour/besan/chanaga pindi : 4 table spoons
Egg yolk : 1
Sliced Medium onions : 2 
chilly powder : 1 tea spoon
Salt to taste
Finely chopped coriander leaves : 1/2 cup
Oil for shallow frying
Melted butter : 1 table spoons
Ginger garlic paste : 1 table spoon

For spice powder :

Nutmeg/jayphal : 1 (small)
Mace/javintri/japatri : 1
Cloves : 5
Cardamom : 4
Cinnamon sticks : 2
Shah zeera /black cumin seeds : 1 tea spoon
Black pepper corns : 1 1/2 tea spoon
Star anise : 1

Method :

First dry roast all spice powder ingredients for 2 to 3 minutes and let them cool completely then blend into a fine powder

Now dry roast gram flour until the raw flavors disappear then switch off the flame

Now take a pan heat oil and add sliced onions fry till they changes into golden color. Now blend this fried onions into fine paste by adding little water.

Now take mutton mince add roasted gram flour,blended spice powder,fried onion paste and other all ingredients (except oil) and mix it well with your hands.

Now heat one charcoal put this charcoal in a small bowl pour 1/2 tea spoon of oil or ghee on heated charcoal immediately cover the bowl with lid and let it Sit for 2 to 3 minutes

Now remove charcoal bowl from it and cover with lid and put this bowl in refrigerator for an hour.

Now take some portion of kebab mixture make round shape patties and shallow fry them on medium heat by turning and pressing on both sides.

Now take them into a plate serve with onion rings and lemon wedges.
Take spice mix ingredients

Dry roast for few minutes

Let them cool completely and take into a blender

Blend into a fine powder
Dry roast gram flour until raw flavors disappear

Fry onions into golden color

Blend into a fine paste by adding little water

Take mutton mince add chilly powder and salt

Add chopped coriander leaves

Add roasted gram flour

Add blended spice powder

Add ginger garlic paste

Add fried onion paste, egg yolk and melted butter

Mix it well


Put hot charcoal in a bowl and place this bowl in kebab mixture

Pour some oil or ghee on charcoal

Immediately cover with lid and leave for few minutes

Now take out the bowl

Cover with cling wrap or lid and let it sit for an hour in refrigerator

Make round patties


Heat oil and fry them on both sides In medium flame

Fry until they changes into golden color and take them into Plate


Serve hot!!!
