EGG PULUSU/ANDHRA KODI GUDDU PULUSU


Hi, today I'm going share another basic recipe for beginners. That is egg pulusu. This is basic recipe that everyone can try this easily. It is a quite common dish in Andhra and telangana. Boiled eggs cooked in a spicy and tangy sauce.tastes Really yummy . Whenever I feel lazy to make 2 or 3 dishes in lunch or dinner I just prepare this dish in few minutes and serves with hot rice.

 Ingredients :

Eggs : 4 to 5
medium sliced onions : 5
Medium chopped tomatoes : 3
curry leaves : 2 strings
Mustard seeds/aavaalu : 1 tea spoon
Cumin seeds/jeelakara : 1/2 tea spoon
Oil : 2 to 3 table spoons
Medium lemon size tamarind or as per your taste
Coriander powder : 2 tea spoons
Chilly powder : 2 tea spoons
Turmeric powder : 1/2 tea spoon
roasted cumin and fenugreek seeds powder : 1/2 tea spoon
salt to taste

Method :

First boil eggs for 6 to 8 minutes. Remove shell and make slashes on egg and keep it a side

Now soak tamarind in water

Heat oil in a kadhai/pan add mustard seeds and cumin seeds let them crackle

Now add onions and curry leaves saute until onions turns soft (no need Brown color)

Now add all spice powders ,salt and saute for 1 to 2 minutes on medium flame

Now add tomatoes cook until tomatoes gets soft then add 3 cups of water and boiled eggs cover and cook for 5 minutes

Now squeeze soaked  tamarind and take out the juice, add this tamarind juice to curry stir it. Cover and cook for 3 to 4 minutes (add some water if required)then simmer the flame cook for 2 to 3 minutes, remove from flame and serve.
Boil eggs

Remove shells and make slashes on eggs

Soak tamarind

Heat oil add mustard seeds and cumin seeds let them crackle

Add onions

Add curry leaves and saute well

Add salt and all spice powders

Saute for couple of minutes

Add tomatoes

Cook them well

Add water

Drop boiled eggs

Cover and cook them for a while

Take juice from soaked tamarind

Add tamarind juice

Stir it and cook for a while

Simmer the flame for couple of minutes and remove from fire

Serve hot!!!!!
