Hi guys..... Though I have shared many cake recipes in my blog, never shared a basic vanilla cake recipe. I'm getting so many requests from viewers to share a basic vanilla cake recipe for beginners. First I wanted to share basic vanilla cake recipe with eggs, but again I postponed that recipe for some other day and baked eggless cake for vegetarian Friends. This recipe is a basic one which you can bake this cake without oven. Yes, I'm going to share eggless vanilla cake recipe in pressure cooker. You can use this cake for pastries and can decorate with buttercream icing. You can use any flavor of essence as per your taste. But don't ask me for substitute for condensed milk, condensed milk is must in this recipe. I have another version of vanilla cake which is made with curd, will share that recipe some other day.

6 inch cake tin
My one cup measures 200 ml
All purpose flour/maida : 1 1/4 cup/125 grams
Condensed milk : 3/4 cup/100 grams(recipe here)
Powdered sugar : 2 table spoons
Oil or melted butter : 1/2 cup
Baking powder : 1 tea spoon
Baking soda : 1/4 tea spoon
Warm water : 1/2 cup
Vanilla essence : 1 tea spoon
Take 6 inch cake mould, grease oil or butter all over the mould. Now line with parchment paper. (if you don't have parchment paper dust with flour well)
Now take pressure cooker, pour sand in it and spread it well. Then place a stand in it.
Cover the pressure cooker with lid, make sure you remove whissle form lid.
Now heat pressure cooker on low flame for 10 to 15 minutes. This is preheating process.
Meanwhile take condensed milk in a bowl,add oil or melted butter and whisk it well.
Now add powdered sugar and whisk it well.
Now take a sieve add add flour, baking powder and baking soda, sift into wet ingredients and mix it well.
Now add warm water, mix it, then add vanilla essence and mix without lumps.
Now pour this batter into prepared mould.
Now place cake tin carefully in preheated pressure cooker and put the lid.
Now bake this on medium to low flame for 25 to 30 minutes.
Now inset a toothpick or knife, if it comes out clean your cake done.
Now let it cool completely, run a knife around the cake tin and demould it.
Now yummy and soft vanilla sponge cake is ready.

|Line with parchment paper or dust with flour and keep a side|
|Now take pressure cooker and pour some sand|
|Place a stand|
|Put the lid without whissle and preheat for 10 to 15 minutes on medium to low flame|
|Meanwhile,Take condensed milk in a bowl,add oil or melted butter|
|Add powdered sugar|
|Whisk it well|
|Now take a sieve,add flour, baking soda and baking powder and sift into wet ingredients|
|Mix it well|
|Add Warm water|
|Mix without lumps|
|Add vanilla essence|
|Mix it well|
|You can see the batter consistency,nor thick nor thin|
|Pour this batter into prepared mould|
|Put this mould in preheated cooker|
|Bake it on medium to low flame|
|Now cake is baked well|
|Insert a skewer or knife,if it comes out clean your cake baked perfectly|
|Let it cool completely|
|Run a knife around the cake|
