CHRISTMAS ROCKY ROAD BARS RECIPE


This wa the recipe in my list which I wanted to share in this month for Christmas. This is 100% chocolate lovers and kids dish. Because it has lots of chocolate, marshmallows,biscuits, tutti frutti, candied cherries!!!!!  Yummy!!!!! Mouthwatering right? Making these Rocky roads at home are pretty simple to make at home.you know I used my homemade marshmallows ,homemade tutti frutti and homemade condensed milk in this recipe. Feeling really proud of my self... Hahaha.... And one more thing, you can use any roasted nuts and dry fruits to make more tastier.

Ingredients :

Dark/milk chocolate : 200 grams
Condensed milk : 100 grams(recipe here)
Marshmallows : 100 grams(recipe here)
Biscuits : 150 grams (you can use any biscuits)
Tutti frutti and glazed cherries : 1/2 cup(recipe here)
Unsalted Butter : 100 grams

Method :

First line any baking tray or plate with parchment paper and set a side

Now bring chocolate to room temperature and shred it.

Take biscuits in a zip lock bag and crush them well.

Now take chocolate and butter into a oven safe glass bowl or steel bowl and melt chocolate in double boiler

Now add condensed milk and mix it well until well combined

Now remove from fire and add all remaining ingredients and mix it well

Now add this mixture to lined tray and spread and press it evenly.

Refrigerate for 2 hours or overnight And remove parchment paper,cut into bars and serve.
Take all your ingredients

Shred chocolate

Take your biscuits

Crush them

Line a baking tray with parchment paper

Take butter and chocolate in a bowl

Melt it in double boiler

Add condensed milk

Mix it well

Remove from fire and add tutti frutti, cherries

Add marshmallows

Add crushed biscuits

Mix it well

Add it to lined tray and level it evenly

Refrigerate for couple of hours or more

It is well set now

Remove parchment paper

Cut into bars like this

And like this

Serve

PINEAPPLE UPSIDE DOWN CAKE RECIPE



Here is an another easy and tasty pineapple upside down cake recipe for beginners. Yes, if you are beginner in baking, then you can also bake this cake very easily. It tastes really heaven. Texture is so soft and tastes yummy. I made this cake couple of times, every time it turned out great. But this time I made specially for blog. Also Christmas season is on. What can we ask for more right. Actually this recipe calls for Brown sugar but I couldn't find Brown sugar in my place so I used jaggery in this recipe. If you find Brown sugar in your place, then you can use Brown sugar in this recipe.

Ingredients :

All purpose flour/maida : 100 grams/1 cup
Sugar : 120 grams (powdered)
Unsalted butter : 100 grams
Vanilla/pineapple essence : 1 tea spoon
milk : 1/3 cup
Pinch of salt
Pineapple slices : as needed
candied cherries : as needed
Eggs : 3
baking powder : 1 tea spoon
Baking soda : 1/4 tea spoon
Brown sugar/jaggery powder : 75 to 100 grams
butter : 1 table spoon

Method :

First take 8 inch cake tin grease with butter and keep it a side.

Now take jaggery,  1 table spoon of butter, 1 table spoon of water in a pan stir it well until it starts bubbling,then remove from fire and pour this mixture in greased cake tin and spread it evenly. (if you are using Brown sugar, just sprinkle Brown sugar in a pan add butter on Brown sugar)

Now arrange pineapple slices and cherries in cake tin and keep a side.

Now take butter and powdered sugar in a bowl,  whisk it until it gets fluffy.

Now add eggs one at a time and whisk it well. (if mixture curdles also no problem repeat the process)

Now add essence and mix it.

Now take a sieve add flour, baking powder,baking soda and salt,sift it well and add to egg mixture and mix it well. Then add milk and mix without lumps.

Now add this mixture to cake tin and spread it evenly.

Bake for 30 minutes in 180 degrees celsius in preheated oven. Preheat oven for 10 minutes in 180 degrees.

Now let it cool for some time. Place a plate on cake tin and invert it into a plate. That's it yummy pineapple upside down is ready to serve.

Grease butter to cake tin

Take butter, jaggery and water in a pan

Cook for few seconds or until bubbles appear and remove from fire

Pour this mixture in prepared cake tin

Arrange pineapple slices and glazed cherries

Take butter and sugar in a bowl

Whisk it well

Add eggs one at a time

Mix it well

Add essence and mix it well

Take sieve, add all dry ingredients,sift it

Add to egg mixture

Mix it

Add milk

Mix without lumps

Pour this mixture into cake mold and spread it evenly

Bake it

Let it cool for some time and loosen the edges with knife

Place a plate on cake tin and invert it

It done!!!!!

RAVVA PAYASAM RECIPE/SOJI KI KHEER RECIPE



Hi, it's heavily raining here in nellore, just now made and had yummy moongdal kachori.......enjoying rainy days with hot hot kachoris, samosas, pakoras is really fun right...... Hmmm yummy!!!!!!

      Ok,coming to today's recipe, today I'm going to share traditional Indian sweet recipe, that is ravva payasam recipe. This is very easy and tasty dish which you can make with very simple ingredients.

Ingredients :

Soji/semolina/upma ravva : 100 grams
Sugar : 250 grams
milk : 1 litre
water : 500 ml
Ghee : 1 table spoon
Cashew nuts/almonds : 15 to 20
Cardamom : 4
Condensed milk : 100 grams

Method :

Heat ghee in pan fry cashew nuts until golden color and take into a plate.

Now in same pan add ravva and fry on medium flame for 3 to 5 minutes.

Now add hot milk and water by stirring continuously. ( mix water and milk and boil it)

Mix without lumps by stirring continuously and cook for 5 minutes by stirring continuously.

Now add sugar and condensed milk and cook for 3 to 4 minutes or until it becomes thick. Then add cardamom.

It becomes more thicker when it cools. So adjust consistency by adding some milk.

Finally add fried nuts and serve.
Boil milk and water in a pan

Heat ghee add nuts, fry and take into a bowl

In same pan add ravva

Fry for 3 to 5 minutes

Add boiled milk by stirring continuously without lumps


Cook until mixture becomes thick

Add sugar

Add Condensed milk

Stir it well

Add cardamom

Cook for a while

Finally add cashew nuts

Serve
