SOFT AND FLUFFY IDLI RECIPE




Hi...... Today I'm going to share another yummy south indian breakfast idli recipe. So many people fail to make soft and fluffy idly at home. Even I use to fail so many times to make soft idlies. My mom and my aunt (maami) told me the trick to make soft idlies. It is nothing but a soft batter and fermentation. We should grind urad dal in to very smooth paste and need to ferment for 10 to 12 hours. In summer 8 to 9 hours is enough.in other states like Tamil nadu and Kerala idly is made with urad dal and rice but in andhra you mostly find idly made with rava. We here make idly with rava idly. (not soji) . So I'm presenting our idly recipe.

          It well goes with sambar,coconut chutney (recipe here)and nalla karam podi. Follow my recipe to make yummy and soft idly. I hope you like this recipe and you will give this a try and let me know how it turned.

Ingredients :

Urad dal/minapappu /white lentils : 1 cup
Idly rava : 2 cups
Cooking soda/soda bicorb : 1/4 tea spoon
Salt to taste

Method :

Soak urad dal/minapappu for 2 hours

Soak rava for 30 minutes

Now wash soaked dal and grind it with water and make a very fine paste.

Now take this into a steel or plastic container

Drain water from soaked rava squeeze the excess water from rava and add to batter.

Now mix it well and cover with lid. Let it ferment for 10 to 12 hours. If it is summer 8 to 10 hours is enough.

Now after 10 to 12 hours add salt and soda bicarbonate mix it well.

Now wet your idly mold fill molds with batter.

Now pour some water (around 250 ml to 300 ml of water) in idly stand put idly molds in it.

Cook on medium flame for 5 to 6 minutes then cook on high flame for 8 to 10 minutes.

Now dip spatula in water and remove idly from mold and serve hot.

Soak urad dal/minapappu for 2 hours

Soak rava for 30 minutes

Wash and drain water then take into a blender

Blend into a fine paste

Take this into. Vessel

Squeeze water from rava

Add to  batter

Mix it well


Cover it and let it ferment

Our batter is fermented well

Add salt and soda

Mix it well

Put some batter in molds


Pour water in idly maker

Put idly stand in it and cook

Idlies are cooked well

Dip spatula in water

Remove idlies

Serve hot!!!!!!!

HOW TO COOK SOYA CHUNKS RECIPE?



Hi.........today I'm going to share another basic recipe that is how to cook soya chunks. I'm going to share many recipes using soya chunks/meal maker. So thought to post separate post,I have added little milk to boiling water to get rid of raw smell. I found this tip from yummy tummy website. It really works. You don't get any raw smell if you add milk to boiling water.

If you want to make any recipe with soya chunks this is the basic process you have to follow.

Ingredients :

Soya chunks : 1 cup
Water : 2 1/2 cups
milk : 1/4 cup

Method :

First take milk and water in a pan let boil then remove from fire

Now add soya chunks then cover the lid and leave for 10 to 15 minutes.

Now strain it in a strainer and put under running water.

Now squeeze out the excess water and use.
Boil water and milk switch off the flame then add soya chunks

Stir it once and cover the lid leave for 10 to 15 minutes

After 10 to 15 minutes they looks like this

Drain the water

Put under running water


Squeeze the excess water
Now it's ready to use.

SMOKED DAHI MURG / SMOKED YOGURT CHICKEN CURRY RECIPE

       Ok,coming to today's recipe, dahi murg. I found this recipe from Facebook group posted by zainab aliasgar. This recipe impressed me a lot and I can't stop my self to try and post this recipe. When I first tasted this dish it was absolutely delicious. Chicken marinated and cooked in lots of yogurt and smoked with charcoal smoke. I love this smoking process. I highly recommend you to try this recipe. You will definitely going to like this recipe. It well goes with pulao,any roti or naan and streamed rice.

Ingredients :

For marination :

Chicken : 1 kg
Beaten curd : 100 ml /1/2 cup
Coriander powder : 2 table spoons
red chilly powder : 1 table spoon
Ginger garlic paste : 2 table spoons
Salt to taste
garam masala powder : 1 tea spoon

For gravy :

Medium size onions : 5
oil : 4 table spoons
Beaten curd : 200 ml / 1 cup
Salt to taste

Onion rings : 1/2 cup

Method :

First take chicken add all marination ingredients mix well and keep a side for 1 to 2 hours or over night.

Now blend onions into fine puree

Now heat oil in a pan add onion puree saute for 3 to 4 minutes

Now add marinated chicken and cook till oil leaves it's sides.

Now add beaten curd saute for 3 to 5 minutes

Now pour some water and cook till chicken is done. (add salt as per your taste)

Adjust gravy as per your taste by adding water.

Now cook on low flame for five minutes and remove from fire.

Now heat charcoal

Now arrange onion rings on gravy and place a steel bowl then put charcoal in a bowl

Now pour few drops of oil on charcoal and cover the lid and leave for 2 to 3 minutes remove charcoal bowl and serve.
Add all marination ingredients into chicken

Mix and leave for few hours

Blend onions into fine puree

Heat oil add onion puree

Saute for few minutes

Add marinated chicken

Stir it

Cook till oil leaves it sides

Add beaten curd

Saute for few minutes

Pour water

Cook by covering the lid

Chicken is cooked now cook on low flame


Heat charcoal

Place in a bowl and pour some oil

Cover with lid leave for few minutes

Dahi murg is ready!!!!
