RESTAURANT STYLE PANEER DUM BIRYANI RECIPE/PANEEE BIRYANI RECIPE


I always try to make different variety dishes in paneer. This is another yummy paneer dum biryani recipe. Paneer cooked in lots of spices and yogurt, layered with rice and cooked on dum. Tastes really heaven.as we all know paneer is a great substitute for meat. If you are a vegetarian then you can also enjoy the authentic taste of dum biryani.

Ingredients :

For marination :

Paneer : 250 grams (recipe here)
Thick curd/yogurt : 150 grams
chilly powder : 1 tea spoon
Coriander powder : 2 tea spoons
Salt to taste
Medium sliced onions : 3
biryani masala/garam masala : 1/2 tea spoon (recipe here)
Lemon juice : 2 tea spoons
Ginger garlic paste : 1 1/2 tea spoon
Oil : 2 table spoons
Chopped coriander leaves : 1/4 cup
Chopped mint leaves : 1/4 cup
Green chilly (chopped) : 1

To cook rice :

Basmati rice : 400 grams
Oil : 1 table spoon
Cinnamon : 2 small pieces
Cloves : 3
Star anise : 1
Bay leaf : 1
Shazeera/black cumin seeds : 1 tea spoon
Salt : 2 tea spoons

Fried 15 cashew nuts for garnishing
ghee : 2 tea spoon

Method :

First fry onions in 1/2 cup of oil on medium flame until they changes into golden color and take into a plate

Now take beaten curd in a bowl add fried onions and all marinate ingredients mix it well then add paneer pieces mix it and marinate for 1 hour.(reserve half of the fried onions)

Meanwhile wash and soak rice for 30 minutes.

Now to cook rice,boil plenty of water in a big vessel add all Ingredients,cook until rice is cooked 80 %.

Now drain the water, reserve 1/2 cup of boiled rice.

Now spread  marinated paneer in heavy bottom pan then spread cooked rice and pour reserved water on top.

Sprinkle some fried onions and coriander leaves. Add ghee Cover with lid, seal the edges with. Aata dough or aluminum foil, cook on low flame For 20 to 25 minutes,remove from fire and mix gently and serve.

Fry onions until golden Brown

Take Beaten curd add all spice powders

Add coriander,mint leaves and green chillies

Add salt

Add oil

Add half of the fried onions 

Add ginger garlic paste

Mix it well

Add paneer mix it well

Oops! Forgot to add lemon juice, squeeze lemon

Mix and marinate for 1 hour

Wash and Soak rice for 30 minutes

Boil water in a vessel add whole garam masala

Add Salt

Add oil

Add soaked rice

Cook until 80% done

Drain and reserve 1/2 cup of water

Spread marinated paneer in a heavy bottom vessel

Spread cooked rice

Pour reserved boiled water all over the rice

Sprinkle some fried onions

Pour ghee

Cover and cook on low flame

It's well cooked Now

Mix gently

Serve hot with raita
