HYDERABADI CHICKEN DUM BIRYANI RECIPE



Are you guys ready for another traditional biryani recipe ????? Then get ready to learn  tasty authentic Hyderabadi chicken dum biryani recipe. Hyderabadi biryani is very famous dish in all around the globe. It has it's unique flavors and authentic taste. Though I have shared best biryani recipes in my blog, but never posted non veg dum biryani. I'm receiving so many messages for chicken dum biryani, and I always gave the link of my Facebook page recipe link.  But here I'm sharing dum biryani recipe with clear pictures and detailed recipe which I made today. Ingredients :


To cook rice :

Basmati rice : 1 kg
Salt : 2 table spoons
Green chillies : 2
Shahi jeera : 1 tea spoon
Cardamoms : 6
Cinnamon sticks : 2 (2 inch size)
Bay leaves : 2
Cloves : 6
Pinch of orange food color or saffron
Kewra water : 2 table spoons
Star anise : 1
Ghee : 2 table spoons

Chapathi dough for sealing
Fried ccashew nuts : 20

For marination :


Chicken : 1 kg
Ginger garlic paste : 3 table spoons
Large onions : 4
Curd/yogurt : 400 grams
Oil : 200ml
Lemon juice : 3 table spoons
Chilly powder : 2 tea spoon
Coriander powder : 2 table spoons
Turmeric powder : 1/2 tea spoon
Salt to taste
Chopped coriander leaves : 1/2 cup
Chopped mint leaves : 1/2 cup
Green chillies : 2
Kewra water : 2 table spoon
Biryani masala powder : 2 tea spoons(recipe here)


Method :


First fry onions in oil until light Brown color and take into a bowl and keep a side.

Now take chicken aDr all marination ingredients, add half of the fried onions, add half of the coriander and mint leaves, add oil which we have fried onions, mix it well and marinate for 4 hours.

After 4 hours, wash and soak basamati rice for  30 minutes to 1 hour.

Now take large vessel boil plenty of water and add whole spices ,green chillies and salt

Now add soaked rice and cook until 70 to 80% done, then drain the water.

Now Cook  marinated chicken in heavy bottom vessel for 4 to 5 minutes and spread cooked rice evenly.

Now sprinkle remaining fried onions,coriander and mint leaves,Kewra water,ghee.

Now mix food color or saffron with 2 table spoons of milk and pour on rice.

Now cover lid and seal the edges with chapthi dough or as shown in the pic.

Now cook on low flame for 30 minutes and switch off the flame. Leave it for 5 to 10 minutes and remove the lid.

Now mix biryani well, garnish with fried onions and cashew nuts and serve.

Take all your ingredients

Fry onions until golden brown and take into a plate

Now take chicken pieces,add curd

Add chilly,coriander and turmeric powder

Add green chillies

Add ginger garlic paste

Add biryani masala powder

Add half of the mint leaves

Add salt

Add coriander leaves

Add half of the fried onions

Add lemon juice

Add kewra water

Add oil

Mix and marinate for 4 hours

Meanwhile wash and soak rice for 30 minutes to 1 hours

Now boil water in a vessel

Add whole spices

Add salt

Add green chillies

Add soaked rice

Cook until 70% done

Now drain the water and keep a side

Now place marinated chicken in heavy bottom pan

Cook for 4 to 5 minutes and remove from fire

Now spread cooked rice


Sprinkle remaining fried onions,coriander leaves,mint leaves and ghee

Now mix food color or saffron with some milk and pour on rice

Add some kewra water

Now put chapathi dough on vessel like this

Now cover with lid and press it tightly

Cook on low flame for 30 minutes,this is dum process

Now it's done

Gently mix rice

Serve!!!!!
