CHOCOLATE ALMOND BROWNIES

Recently I prepared this yummy, chocolaty,nutty brownies for my kids. I served this brownies as evening snacks for my kids.they loved this chocolaty brownies a lot.

                     these brownies are perfect to serve with tea or as a ice cream.whichever way you choose to have it,you are sure to fall in love with this chocolate almond brownies.

                I used almonds in this recipe, you can cashew nuts or walnuts as per your taste.

            There are so many varieties of brownies which I'm going to share in my upcoming posts.

Ingredients :

All purpose flour/maida : 3/4 cup
Cocoa powder : 1/4 cup
Powdered sugar : 1 cup
dark chocolate : 150 grams
Butter : 100 grams
Vanilla essence : 1 tspoon
baking powder : 1 tspoon
Eggs : 3
chopped almonds : 1/4 cup

Note : all ingredients should be at room temperature.

If you are using unsalted butter add 1/4 tspoon of salt.

Preheat oven in 180 degrees Celsius for 10 minutes.

Method :
1)first melt butter and dark chocolate in double boiler.keep it a sideq

2)break eggs into a mixing bowl whisk it well.

3)add powdered sugar to eggs and whisk it well.

4)add vanilla essence and mix well.

5)now take a sieve add flour,cocoa powder and baking powder sift it well and add this mixture to sugar and egg mixture.

6)mix gently,make sure there are no lumps in batter.

7)now add melted butter and chocolate mixture to batter.

8)mix well,take chopped almonds and toss in some flour and add to brownie mixture,fold gently.

9)pour this brownie mixture to greased and dusted cake tin.

10)sprinkle some chopped almonds on top.

11)bake  in 180 degrees Celsius for 20 to 25 minutes in preheated oven or till if you insert a toothpick it should comes out clean.

12)let it cool completely and demould it and cut into pieces and serve.

 add flour mixture to egg mixture and mix well,add melted butter and chocolate mixture to batter and mix it well
 Add almonds and mix gently
 pour this brownie mixture to cake mould and sprinkle some nuts on top, bake and enjoy!!!!!!!
Yummy brownies are ready to serve!!!!!

Gajar ka halwa/carrot halwa

I know this is everyones favourite desert.......one of my viewer requested this sweet recipe,how can I ignore or refuse to make this yummy dish!? So one day I planned to make this yummy carrot halwa!!!!!

                  There is one another reason to make this carrot halwa,that is my hubby.....:)

            Hubby is coming home after 25 days from his business trip!!!!!! So, I was really happy and prepared this halwa for him. Hubby don't like cakes or pastries,he only likes traditional food. So I always try to make traditional food for him.

                          Ok,coming to this recipe,carrot halwa is a most popular dessert in India, that we love to eat a lot!!!!!
no one can refuse to eat this yummy sweet.
grated carrots/gajar cooked in milk,condensed milk/khoya and lots of nuts.

                         I used my homemade condensed milk for this recipe,check blog posts for homemade condensed milk recipe.you can also add khoya.

 heat ghee in a pan fry nuts and take them in a bowl.add grated carrots saute them and pour milk stir it
 Cook carrots by covering the lid till carrots are soft.add sugar
 Add condensed milk and cardamoms cook till it is done.stir in between and add nuts before serving


Ingredients :

Grated carrots /Gajar : 500 grams
Milk : 1 liter
Condensed milk /khoya/kova : 1/2 cup
Sugar : 400 grams
Cardamom : 4 (crushed)
Ghee : 1/3 cup
Cashew nuts/almonds/pistachios : 1/4 cup

Preparation :

1)heat ghee in a pan,add nuts and fry them till light golden color and take them in a bowl and keep a side. (I used sliced almonds)

2)in same pan add grated carrots and saute for 5 to 6 minutes or till the raw flavours disappears.

3)now pour warm milk to it and cook till carrots are cooked by covering the lid.

4)stir in between

5)when carrots are done add sugar,condensed milk and crushed cardamoms and stir it.(you can also add cardamom powder)

6)cook till sugar is completely dissolves and it comes to nice halwa consistency.

7)now switchoff the flame and sprinkle fried nuts and serve.

Ridge gourd ,egg drop curry

We usually prepare this curry at home,this is very easy to make and yummy in taste.
You can serve this with roti, rice,paratha or anything you want to.
         
                  Ridge gourds cooked in Indian spices along with eggs.this is the best combination for steamed rice and chutney.it goes well with roti and paratha also.

              The main thing is choosing ridge gourds,break ridge gourds into two and taste some piece, if it is bitter in taste it's not good to use.if it is sweet use it.this a small tip for you.

Ingredients :

Ridge gourds/turay : 1/2 kg
eggs : 3
Chopped medium onions : 2
Chopped medium tomato : 1
chilly powder : 1/2 tspoon
Coriander powder : 1 1/2 tspoon
Turmeric powder : 1/2 tspoon
Coconut paste : 1 tspoon
ginger&garlic paste : 1 tspoon
Chopped coriander leaves : 1 table spoon
oil : 2 table spoons

Preparation :

1)First take ridge gourds, peel the skin edges and cut into round pieces.

2)heat oil in a pan add onions and saute for 3 to 5 minutes.

3)now add ginger garlic paste saute for 1 to 2 minutes.

4)now add tomatoes cook till tomatoes are cooked well.

5)now add chilly powder,turmeric powder,coriander powder and coconut paste saute for few minutes.

6)now add ridge gourd pieces and saute for few minutes and add salt.

7)now pour enough water and cover with lid. Stir in between.

8)when ridge gourds are half cooked break eggs and drop them into curry don't stir, cover with lid and cook for 5 minutes and stir it.

9)when water is absorbed reduce the flame and add coriander leaves and cook for 5 minutes on low flame.that's it switchoff the flame.

10)yummy ridge gourd,egg drop curry is ready serve!!!!!!!!
 peel,wash and cut ridge gourds
 heat oil saute onions,add ginger garlic paste saute it add tomatoes and saute them add coriander powder

 add coconut paste,turmeric powder chilly powder saute well
 Add ridge gourd to masala add salt saute well and pour enough water and cook
 when ridge gourds are half done break eggs and cook by covering the lid,when water absorbs add coriander leaves and cook on low flame and switchoff the flame.
Serve hot with steamed rice!!!!!




vegetable dum biriyani

Vegetable dum biryani is a royal dish that is aromatic and delicious.making dum biryani is Very easy.

                  Dum biryani is prepared with fresh vegetable and lots of masalas,as we all know vegetable dum biryani is quite popular across the world.one of my viewer requested this recipe.i used my homemade biryani masala in this recipe,Check blog posts for homemade biryani masala recipe.

                I added vegetables like French beans,carrots and beans. You can also add your favourite veggies like, cauliflower,capsicum. We can add paneer too.

Ingredients :

Basmati rice : 1 kg
Curd : 300 ml
Carrots : 1 cup (cut into 1 inch size)
French beans : 1 cup (cut into inch size)
Fresh/frozen peas : 1 cup
Cubed potatoes : 2 (medium size)
Sliced medium onions : 3
Ghee : 1/3 cup
Oil : 1/2 cup
chilly powder : 1 tspoon
Coriander powder : 1 table spoon
turmeric powder : 1/4 tspoon
Green chillies : 2 (Chopped)
biryani masala : 1 tspoon
Lemon juice : 2 table spoons
Salt to taste
Ginger garlic paste : 1/3 cup
keora water / kewda jal : 2 table spoons
chopped coriander leaves : 1/2 cup
Chopped mint leaves : 1/2 cup
cinnamon stick : 2 (inch size)
star anise : 1
shahi zeera /black cumin seeds : 1 tspoon
Cloves : 4
cardamom : 5
bay leaves : 2
saffron /yellow food colour : 1/4 tspoon

Preparation :

1)First take basmati rice wash 3 times and soak for 30 minutes

2)now take a pan heat oil and add onions fry them on medium flame till they changes into nice golden color and take them into a bowl

3)now take a big bowl add all veggies, add all ingredients (except,food color, keora water and ghee).add half of the fried onions and oil which we fried onions and mix well and marinate for 30 minutes( and keep half onions a side.) (take some coriander and mint leaves and keep a side)

4)now take a vessel pour water to cook rice,add 2 table spoons of salt and let it boil

5)when water comes to boiling stage add soaked rice and cook on high flame till rice is 70 % cooked .it takes 5 to 7 minutes

6)now drain the excess water from the rice

7)now take a heavy bottom pan put the marinated veggies and spread it evenly

8)now put half cooked rice on marinated veggies and spread it evenly

9)now sprinkle remaining fried onions,coriander leaves and mint leaves

10)pour ghee and keora water evenly

11) now mix food color /saffron in milk and pour on rice

12)cover the pan with lid and seal the edges with aluminum foil or ata dough

13)now cook on high flame for 3 to 5 minutes and reduce the flame

14)cook for 25 minutes in low flame

15) after 25 minutes switchoff the flame and leave for 10 minutes,then open the lid

16)mix masala and  rice gently by sides

17)serve with raita and enjoy!!!!!!

 fry onions and take them into a bowl
 take your veggies and add ingredients mix well and marinate for 30 minutes
 boil water and add rice cook till it is 70% done and drain excess water
 Take heavy bottom pan add marinated veggies spread it evenly and add rice on top and spread it evenly.....add coriander, and mint leaves,keora water,ghee,fried onions and food colour and cook on low flame
 now it's done ( i used big non stick pan)
 Mix gently from it's sides
 After mixing it.....it looks like this
 Serve hot with onion raita

Homemade biryani masala recipe

Homemade biryani is a blend of whole spices and lightly roasted and powdered.this is used in biryanis as this masala powder gives not only flavours but immense aroma to the dish.
   
                        Today I'm going to show this  awesome biryani masala.I'm going to make different types of biryanis with this masala.

                         Recently I prepared veg dum biriyani by using this biriyani masala.......the flavours in biryani was really awesome!!!!!!!! Taste was too good!!!!!!!

Ingredients :

Coriander seeds : 1/3 cup
Cinnamon : 4 to 5 sticks (2 inch size)
Cloves : 1 table spoon
Green cardamom : 12
Black cardamom /badi elachi : 1
Nutmeg/jayphal : 1
Star anise / anasa puvvu : 2
Bay leaves/biryani aaku/tej patta : 3
Fennel seeds/souf/sompu : 1 table spoon
Shahizeera/black cumin seeds : 1 table spoon
Cumin seeds : 1 tspoon
Mace/japatri /javitri : 1
marathi moggu /marathi mogga/kapot buds : 3

Preparation :

1)roast all ingredients in a pan for 3 to 5 minutes on medium flame.

2)let it cool completely

3)blend into fine powder

4)store in airtight container.
Roast it,cool it,blend it and use it :)

Gutti vankaya vepudu / stuffed brinjal fry

Gutti vankaya vepudu /stuffed brinjal fry is yummy traditional andhra dish,we people in andhra die for this dish :)
                   
                            Now you can imagine how tasty it is......we make this as fry and curry also. curry name is gutti vankaya koora, which I love a lot in vegetarian curries and I will sure share the recipe with you.this is my mom's recipe ,mom cooks veg curries really well.....especially this gutti vankaya vepudu........you know? I will have 5 to 6 brinjals at a time :)

                    Recently I prepared this dish as side dish in lunch box for my kids they really like it.this time I want  to share this recipe with you......you can have this with rasam rice,dal rice,sambar rice and paratha.


Ingredients :

Fresh brinjals : 1/2 kg
Dried /fresh chopped coconut : 1/4 cup
Peanuts : 1/4 cup
Sesame seeds : 1 table spoon
Ginger & garlic paste : 1/2 tspoon
Cinnamon : 1 inch stick
Cloves : 2
Red chilly powder : 1 tspoon
Turmeric powder : 1/2 tspoon
Coriander powder : 2 tspoon
Salt to taste
Oil : 1/3 cup

Preparation :

1)first roast peanuts till they changes into golden color switch off the flame and take peanuts into a bowl,in same pan add sesame seeds and saute for few seconds and take them into a bowl and keep a side.

2)blend coconut, cloves and cinnamon in to fine powder.

3)add roasted and peeled Peanuts ,sesame seeds blend into fine powder and add other ingredients into mixie jar (except oil) and blend them well (don't add water)

4)now take brinjals and make deep cross in each brinjal and drop them in big bowl of water

5)now take one brinjal and stuff some masala in it and press gently with hands and put in plate.....repeat the same process for other brinjals too.

6)heat oil in a pan place  stuffed brinjals in pan evenly and cook on low flame for 5 minutes by covering the lid.

7)now after 5 minutes flip every brinjal and cook for another 5 minutes by  covering the lid.

8)if there is leftover masala sprinkle on fried brinjals and saute gently for 2 minutes and switch off the flame.

9)now yummy, yummy gutti vankaya vepudu is ready to serve!!!!!!!
 roast peanuts and sesame seeds.....blend coconut,cinnamon and cloves,then add roasted peanuts and sesame seeds and blend them
 add all ingredients except oil and blend them
 make deep cross in each brinjal and drop them in water
 Take some masala and stuff it in brinjal and gently press it
 Now heat oil in a pan place stuffed brinjals evenly and fry them on low flame for 10 minutes stirring in between by covering the lid
 sprinkle leftover masala and saute for 2 minutes and switchoff the flame......enjoy the yummy and tasty gutti vankaya vepudu!!!!!!!

Homemade veg burger


Making burgers at home is a  really fun for me.........these burgers are tasty and healthy too........i always prefer homemade food for my kids because they are healthy and tasty....
 
                   In this recipe I used homemade buns, homemade mayonnaise and homemade veg patties.....you can also use store bought mayo and buns.i have already posted homemade Burger buns recipe and homemade mayonnaise recipe, please check my previous blog posts for recipes or recipe links given below.

                          In this recipe I didn't add lettuce and tomatoes because my kids don't like them, if you want you can add lettuce and tomatoes. I hope you like it...... Give it a try and let me know how it turns out for you.

   ingredients :

For veg patties :

Chopped carrots : 1 cup
Chopped French beans : 1 cup
Chopped potatoes : 1cup
Chopped onions : 1 cup
Red chilly powder : 1 tspoon
Turmeric powder : 1 tspoon
Salt to taste
oil : 1 table spoon
maida : 1/4 cup + 1/4 cup
coriander leaves : 1/4 cup
bread crumbs : 1 1/2 cups or as required
oil for deep frying veg patties

Makes 4 to 5 patties

For burgers :

Buns : 4 to 5
grated cheese or cheese slice
tomato sauce as required ( 1 to 2 tspoons for each burger)
Onions (medium) : 2 to 3 (cut into rings)
butter : 1 tspoon
Mayonnaise : 2 tspoon for each burger

Preparation for patties :

1)Cut all your veggies and keep a side

2)heat oil in a pan add onions and saute for 2 minutes and add all chopped veggies and saute for 1 minute

3)cover the pan with lid and cook on low flame for 5 minutes by stirring in between

4)add salt, chilly powder and turmeric powder saute for 1 minute in low flame and cover the lid, cook for 5 minutes by covering the lid.

5)now add coriander leaves and saute for few seconds

6)now add 1/4 cup of flour and saute for 2 to 3 minutes and coarsely mash the veggies with spatula and switch off the flame and let it cool down completely

7)now take a bowl add remaining 1/4 cup of flour pour water and mix it..... make a batter.....batter should not be thick nor thin

8)now divide veggies mixture into 4 to 5 equal portions and make flat and thick patties

9)now take one patty dip gently in flour batter and coat with bread crumbs and fry them in hot oil on medium to high flame till they changes into nice golden color

10)repeat the same process for other patties


Preparation for burger :

1)Heat butter in a pan add onion rings and saute for 1 to 2 minutes and take them in a bowl ( this is completely optional you can use raw onions in your burger)

2)cut buns into two parts apply mayonnaise  on them

3)put some onion rings and place one veg patty on onions and put cheese slice or grated cheese

4)pour some tomato sauce again put some onions and at last put other part of bun on top and enjoy your yummy veg burgers.

 for patties : heat oil saute onions

 add veggies and salt cook on low flame for 5 minutes by covering the lid add turmeric powder and chilly powder saute them and cook for another 5 minutes on low flame
 Add flour saute for few minutes
 add coriander leaves and saute for one minute and coarsely mash the veggies and switchoff the flame and let it cool completely
 divide veggie mixture into equal portions and make patties and keep a side
 now make flour batter dip patty in flour and coat with bread crumbs and fry them in hot oil
 fry till golden color and keep a side
 Heat butter in a pan saute onions (optional)and keep a side
 now our buns ,patties,mayonnaise onions are ready take a bun and make two parts apply mayonnaise to each part of the bun put some onion rings
 place one patty on onions and put some cheese then some onions and then tomato sauce over it and cover with other part of the bun
Enjoy the yummy tasty homemade veg burgers......!!!!!!!
