Easy carrot halwa recipe/pressure cooker gajar ka halwa recipe



Halwas are my all time favorite desserts. I enjoy making different types of halwa at home. But in my opinion carrot halwa and Karachi halwa are the very popular sweets in India. I have already shared carrot halwa recipe which is cooked in kadhai here. Today I'm going to share easy pressure cooker version of carrot halwa which tastes so delicious. So, let's get started.....


Servings : 4 to 5


Ingredients :


Carrots : 500 grams
Cashewnuts and almonds : 10 each (sliced)
Cardamom powder : 1/2 tea spoon
Sugar : 250 to 300 grams or as per your taste
Milk : 500 ml
Condensed milk : 1/2 cup
Ghee : 1/3 cup/75ml

Method :


First peel and grate carrots well and keep a side.

Now heat ghee in a pressure cooker,add nuts and fry until they changes into golden color and take into a plate.

Now add grated carrots and saute for 5 minutes or until raw flavors disappear.

Now add milk and mix it well, put the pressure cooker lid and cook for 2 to 3 whistles and remove from fire.

Now let all the pressure goes out. Remove the lid carefully and put on fire.

Now add sugar and stir constantly until Sugar melts and water gets dry. 

Finally add fried nuts,cardamom powder and condensed milk, pour some ghee on top, stir it for 2 to 3 minutes and remove from fire.

Grate carrots well

Heat ghee in a pressure cooker add nuts

Fry until they changes into golden and take into a plate

Now add grated carrots

Saute for 5 minutes


Pour milk and mix it well

Put the pressure cooker lid and cook for 2 to 3 whistles

Now let the pressure goes out and carefully remove the lid

There is still some milk, stir it well

Add sugar and cook it well

Add cardamom powder

Stir constantly until water dries
Finally add fried nuts

Saute for few minutes and remove from fire

Serve!!!!!

DOODH PEDA RECIPE/DOODH PEDA RECIPE WITHOUT CONDENSED MILK/MILK PEDA RECIPE


Hi guys.....I hope you all are doing good. I'm so sorry for not posting recipes from long time. I was really tensed these days. Hubby was suffering from dengue from last one week and admitted in hospital for 2 days. Alhumdulillah now he is fine and out of danger. So I'm feeling happy now and entered into blogging with full relief.

           Today I'm going to share authentic doodh peda recipe which is very popular sweet in India. I prepared these milk pedas couple of weeks back and finally got some time to post. You don't need any condensed milk or milk powder for this recipe. All you need is whole milk, sugar and some nuts for garnishing.

Makes : 12 pedas


Ingredients :


Milk : 2 liters
Sugar : 1/2 cup
Almonds for garnishing

Method :


Take milk in a heavy bottom pan and put on fire.

Stir milk continuously until milk thickens and reduced to 30%.

Now add sugar and stir continuously until mixture leaves pan side.

Now let it cool completely and blend it well without adding milk or water. You can also knead with your hands.

If your peda mixture turns liquidy, take it into a pan and cook for few minutes until mixture leaves it's pan sides and take it into a plate.

Now when peda mixture comes to warm temperature take small portions and make balls and give it a peda shape and garnish with almonds and serve.

Stir continuously until milk thickens

Now milk is getting thick and reduced to. 30%

Now add sugar

Stir constantly


Now our peda mixture is getting thick and leaving pan sides

Remove from fire and let it cool completely

Now take it into a blender

Blend into a smooth paste

If your mixture turns liquidy take into a pan and cook for few minutes until mixture thickens

 

Now it's done

Apply some ghee to your hands

Take some portion and give it a peda shape

Serve

PEANUT AND JAGGERY BALLS RECIPE/VERUSANGA MUDDALU RECIPE



These peanut jaggery balls/verusanaga muddalu are my favorite snack from my childhood. I used to buy these everyday when were in school. They tastes so crunchy and yummy. These verusanga muddalu are very healthy snack for everyone. Especially for kids. You need only two ingredients to make these yummy peanut balls. Another version of these peanut balls are chikki. Difference between chikki And peanut balls is,chikki is made with caramelized sugar and verusanga muddalu are made with caramelized jaggery.also shapes are different.

Ingredients :


Peanuts/verusanaga pappu : 250 grams
Jaggery/bellam : 250 grams

Method :


First dry roast peanuts well and take into a plate. Let them cool completely.

Now crush them with hands and remove the dust.

Now take any stone, gently break them into 2 parts and keep a side.

Now take jaggery in a non stick pan or heavy bottom pan, add 1/2 cup of water and stir it well.

Stir constantly until jaggery syrup reaches to hard ball consistency. (to check syrup consistency, take water in a bowl and drop some syrup in it, if it turns hard immediately,then your jaggery syrup is ready).

Now add roasted peanuts immediately and mix it well and remove from fire.

Let it sit for 2 minutes, then apply ghee to your hands, take some portion of mixture spoon and roll into a round ball. Be careful while making balls, otherwise your hands may burn.

Now put them in greased plate and let them cool completely,store them in airtight container and serve.

Note :


Roasting peanuts are very important,but don't over roast them.

Also consistency of jaggery syrup is very important,otherwise your peanut balls may turn chewy.

Let them cool completely before serving and store leftover balls in airtight container. 

Be careful while making balls, always grease your hands with ghee.

If your mixture becomes hard, put back pan on low heat and melt it.

Take peanuts in pan

Dry roast them

Take them in a plate and let them cool completely

Crush them with your hands

Remove the dust

Now gently crush them with any stone to divide them

Now they are divided into two parts

Now take jaggery in a pan

Add 100 ml of water

Stir constantly

Bring it to hard ball consistency

To check hard ball consistency,pour some syrup into water, if it becomes hard,syrup is done

Now immediately add peanuts

Mix it well

Now remove from fire

Grease your hands with ghee well

Roll them into balls(I couldn't take pictures while rolling into balls, I was working with my both hands and mixture was very hot) and place them in greased plate,let them cool completely

Serve!!!!
