HOMEMADE GHEE RECIPE/CLARIFIED BUTTER RECIPE


Ghee is my all time favorite ingredient in my kitchen. Without ghee my kitchen pantry is incomplete. Your's too right? I always prefer homemade ghee in my cooking. It gives really great aroma to your dishes comparing to storebought ghee. Ghee is made with butter which I have already shared here yesterday.

So,I hope you will give this a try and let me know how it turned out for you.


Ingredients :


Butter : 500 grams ((Click here for recipe)

Method :


Take butter in a heavy bottom kadhai and put this pan on low flame.

Now the butter will melt and the milk solids will separate from it and start to foam up.

Now gently stir it once. Keep on heating,Now the foam will subside a little and it will bubble up.

Now the water from the butter will start evaporating and reducing.

When milk solids changes into golden color and get settled at the bottom, immediately remove from fire.

Now tasty and aromatic ghee is ready. Let it cool completely and strain the ghee into a airtight container and enjoy.

Take butter in a heavy bottom pan and put on low flame

Butter starts melting now and milk solids get separated, gently stir it once

Keep on heating over low flame until milk solids changes into golden color

Now our ghee is ready, immediately remove from fire

Let it cool completely and strain the mixture in a airtight container

HOMEMADE BUTTER RECIPE



Hi guys....... Sorry for not posting recipes regularly. I Was busy in my cousin's wedding and had a wonderful time with family.now back to blogging. Today I'm going to share homemade butter recipe. This is a requested recipe by viewers. You can use this butter in cakes and cookies. But I don't suggest to make buttercream frosting and puff pastry. I always use homemade butter to make ghee, which I'm going to share in my next post.

       I always collect cream/malai from chilled milk and freeze it.I collect it for 10 to 15 days and blend it in a blender for few minutes.that's it my butter will be ready. If you can't find full fat milk,then you can use storebought cream.

Ingredients : 


Cream or malai : 2 to 3 cups

Method :


First take full fat milk and let it boil for 20 minutes on low flame then remove from fire.

Now let it cool completely and refrigerate milk for atleast 6 to 8 hours without covering the lid.

Now can observe a thick layer of cream on top. Collect the thick layer of cream in bowl and freeze it.

Repeat the same process until you get 2 to 3 cups of cream/malai.(don't forget to freeze cream)

Now, when all cream is collected, bring frozen cream to room temperature.

Now take cream in a blender jar and blend it for few minutes until mixture turns smooth.

Now add chilled water and blend it for few minutes or untill you can see buttermilk and butter getting separated. 

Now collect your butter and discard the buttermilk.

Wash  butter in water for 2 to 3 times and store it in a air tight container and freeze it for later use.

Take full fat milk

Put on low flame

Boil for 20 minutes on low flame

Remove from fire and let it cool completely and refrigerate for 6 to 8 hours without covering the lid

Now collect the thick cream layer from chilled milk

Freeze it

Repeat the process until you get 2 to 3 cups of cream

Bring frozen cream to room temperature and take it into a blender

Blend it to smooth paste

Add chilled water and blend it until you see butter separated from butter milk

You can see butter floating on top

Take butter into a bowl

Add chilled water and gently wash the butter and discard the water

Repeat the process for 1 to 2 times


Now your homemade butter is ready

EGGLESS CHILLI MAYONNAISE RECIPE/HOMEMADE EGGLESS MAYONNAISE RECIPE


After sharing my homemade mayonnaise recipe Here, I received lots and lots of requests from viewers to share eggless mayonnaise recipe, and I always reply them "will share it soon" finally I'm here with tasty homemade mayonnaise recipe. Actually I was trying to share eggless mayo with milk. I tried so many times with milk but always it failed and waste of money and time. But after lots of research finally I decided to try this recipe and it worked like a champ. It so creamy and tasty which you can prepare within minutes. You can easily store this in a airtight container and refrigerate for 2 to 3 days.

So, I hope you will give this a try and let me know how it turned out for you.



Ingredients :


Corn flour : 3 table spoons
Milk : 1 cup /200 ml
Oil : 2 table spoons
Vinegar or lemon juice : 1 tea spoon
Chilly flakes : 1/2 tea spoon
Mustard powder or mustard sauce : 1/2 tea spoon
Pepper powder : 1/2 tea spoon
Salt to taste
Sugar : 1/2 tea spoon

Method :


First take corn flour in a bowl,add 1/2 cup of milk and mix without lumps.

Now boil remaining milk in a pan and slowly add cornflour mixture by stirring constantly on low flame.

Stir constantly until mixture becomes thick as shown in pic, then remove from fire.

Now let it cool completely, then blend into a smooth paste without lumps.

Now take this into a bowl and add all other ingredients and give it a nice stir. 

That's it homemade eggless mayonnaise is ready to use.

Note : you can add some grated garlic while blending, it gives a nice aroma.

Mix without lumps

Boil remaining milk in a pan

Pour corn flour mixture slowly by stirring constantly

Cook on low flame by stirring constantly

It's getting thick now

Remove from fire and let it cool completely

Take this into a blender

Blend into a smooth paste

Now take blended mixture into a bowl,add mustard powder,salt,sugar,peppst powder,Chilly flakes

Add vinegar

Add oil

Give it a nice mix

Now your eggless mayonnaise is ready!!!

HOMEMADE GARAM MASALA POWDER RECIPE


I received so many messages and requests to share my homemade garam masala recipe,and finally here I'm with my version of homemade garam masala. Garam masala powders plays an key roll in many Indian dishes right. They gives an extra taste and aroma to our dishes.though there are lots of brands available in market  I always  prefer homemade garam masala, So I always prepare a batch of garam masala powder at and store in airtight container.  You just sprinkle some of this garam masala powder to your dishes and see the magic.


I always use rough measurements to make my garam masala , I take equal quantities of cinnamon sticks and cloves approx 8 to 10 cardamoms and other ingredients are 2 pieces for each ingredient. But some how today I managed to give you cinnamon and cloves measurements . You just use 1/2 to 1 tea spoon of garam masala in your dishes because homemade garam masala gives a very strong and aromatic flavours. I hope you will give this a try and let me know how it turned out for you. (this is my version of making garam masala so don't compare with others recipe)

Ingredients :

Cinnamon sticks : 15 (2 to 3 inch size)
cardamom/elaichi : 8
Cloves : 2 to 3 table spoons
star anise : 2
mace/javitri : 2
Pepper corns : 1 table spoon
cumin seeds/jeera : 1 table spoons
nutmeg /jayphal : 2
Bay leaves : 2
marathi mogga/ kapok buds : 2
shahi zeera/black cumin seeds : 1 table spoon

Method :

Take all ingredients in a pan,dry roast for couple of minutes and remove from fire.

Take nutmeg, star anise, kapok buts in mortar pestel and crush them and add to blender, this way all ingredients may easily blend.

Let it cool completely and blend in to a fine powder and store it in airtight container.

Homemade garam masala powder is ready to use.



Take all ingredients

Take them into a pan

Dry roast for couple of minutes

Let it cool completely and take them into a blender

Blend into a fine powder

It's ready to use!!!!!
