MUGHLAI CHICKEN CURRY RECIPE


Mughlai chicken curry popular dish in India. Chicken cooked in creamy, nutty rich sauce.tastes absolutely delicious.the taste of mughlai cuisine vary from extremely mild to spicy and are often associated with a distinctive aroma and the taste of ground and whole spices. This dish contains very mild taste. I served this yummy mughlai chicken curry with butter naan. Combination was so good.

Ingredients :

Chicken : 1/2 kg
Thick yogurt/curd : 1/2 cup
Fresh cream : 1/2 cup
Cashew nut paste : 1/4 cup
Almonds : 10 to 15 (roasted and sliced)
Coriander powder : 1 table spoon
garam masala : 1 tea spoon
Salt to taste
Ginger garlic paste : 2 tea spoons
Chopped large onion : 1
Chopped green chillies : 2
oil : 2 table spoons
Chopped coriander leaves : 2 table spoons

Whole garam masala :

Cinnamon sticks : 2 (inch size)
cardamom : 2
cumin seeds : 1 tea spoon
bay leaf : 1

Method :

First take chicken pieces add 1 tea spoon of ginger garlic paste, 2 table spoons curd and 1/2 tea spoon of salt mix and marinate for 30 minutes.

Now heat oil in a pan add whole garam masala and let them crackle.

Now add onions and chilly saute until they changes into golden color

Now add ginger garlic paste saute well. Then add coriander powder and garam masala saute for few seconds

Now add marinated chicken pieces saute for 5 minutes on High flame.

Now add cashew paste saute for 2 minutes, then add beaten curd and saute for 2 minutes.

Now add cream and saute for another 2 minutes. Then add 1 cup of water ,sprinkle roasted almonds  cover and cook until chicken gets tender. (add some water if required)adjust salt as per your taste.

Finally sprinkle coriander leaves simmer the flame for 2 minutes and remove from fire.

Serve hot with roti or rice.
Take chicken add tea spoon of ginger garlic paste, 2 table spoons of curd and 1/2 tea spoon of salt

Mix and marinate for 30 minutes

Blend some cashews into fine paste

Heat oil add whole garam masala

Add onions and chilly,saute well

Add ginger garlic paste saute well

Add garam masala and coriander powder saute for few seconds


Add marinated chicken saute for 5 minutes

Add cashew paste saute for couple of minutes


Add curd saute for a while

Add cream

Cook for 2 more minutes

Add water 

Sprinkle roasted almonds

Cook until chicken gets tender

Finally sprinkle coriander leaves and serve

NARGISI KOFTA CURRY RECIPE


Nargisi kofta curry is a mughlai dish mostly served with naan. Egg coated with minced meat, fried and served with rich gravy. It tastes great with roti,  naan or rice. If you are inviting your friends or relatives for dinner you can impress them with this  tasty mughlai dish.

     It doesn't take much time to prepare this yummy nargisi kofta curry. You can make this with mutton or chicken. Today I uses minced mutton in this recipe. I have blended boneless mutton in to fine paste and used in this recipe. If readymade minced meat is available in your place you can use that too.I served this with (click here for recipe).

Ingredients :

For kofta :

Minced mutton : 500 grams
large onion : 1 roughly chopped
Green chilly : 1
Chilly powder : 1 tea spoon
Ginger garlic paste : 1 tea spoon
Turmeric powder : 1/2 tea spoon
Salt to taste
gram flour/besan/chanaga pindi : 4 table spoons
garam masala : 1 tea spoon
oil for deep frying

Hard boiled eggs : 6

For gravy :

Medium onions : 3  (blend into fine paste)
medium tomatoes : 4 (blend into fine paste)
Almond/cashew nuts : 25 (blend into fine) paste
Ginger garlic paste : 1 table spoon
Beaten curd : 1/2 cup
Turmeric powder : 1/2 tea spoon
Coriander powder : 1 table spoon
Chilly powder : 1/2 tea spoon
Oil : 3 table spoons
Roasted cumin powder : 1 tea spoon
Garam masala : 1 tea spoon
Coriander leaves : 1/2 cup

Whole garam masala :

Cloves : 4
cardamoms : 4
Cinnamon : 2 (1 inch size)
shah zeera /black cumin seeds : 1 tea spoon

Method :

First  take minced mutton into a blender add all ingredients (except oil and eggs) blend into a fine paste

Now divide this mixture into 6 equal portion

Take polthyn cover,wet your hands and spread one portion of mutton mixture put one boiled egg and roll it and coat egg with mutton mince all over the sides as shown in pic. (make sure no cracks)

Now drop them in hot oil and fry on medium heat until they changes into golden color then take them into a plate.

Now to make gravy heat oil in a pan add whole garam masala then add onion paste and ginger garlic paste saute till raw flavors disappear

Now add add coriander,turmeric,chilly and cumin powders saute for few seconds then add tomato puree cook for 3 to 5 minutes

Now add almond paste and saute for few seconds then add beaten curd saute for 1 minute

Now add 3 to 4 cups of water and cook on high flame for 5 minutes by covering the lid (add more water if needed) stir in between.

Now cut fried eggs into two parts. (this is optional, you can also add whole egg)

Now add fried eggs to gravy and cook on low flame for 3 minutes 

Finally sprinkle coriander leaves and garam masala powder and serve hot.


Take minced mutton into a blender

Add all kofta ingredients

Blend into a fine paste and divide into 6 equal portions

Take  hard boiled eggs remove the shell

Take plastic cover spread one portion of mutton mince

Put one egg in middle

Roll it

Seal the edges and coat egg all over the sides

Gently drop them in hot oil


Fry on medium heat until they changes into golden color

Take them into a plate

Now to make gravy take another pan heat oil add whole garam masala

Add onion paste

Add ginger garlic paste

Saute till raw flavors disappear

Now add all spice powders (except garam masala powder) saute for few seconds

Add tomato puree cook for a while

Add almond paste saute for few minutes

Add curd saute for few minutes

Pour water

Cook on high flame for 5 minutes,stir in between

Cut koftas into half (optional)


Now add koftas to gravy and cook on low flame for 3 minutes

Finally sprinkle garam masala powder and coriander leaves and remove from fire

It's done now!!!


Serve hot!!!!
