ALOO BONDA RECIPE



Aloo bonda is a popular snack and street food in India. Mashed potato masala dipped in gram flour batter and deep fried in oil.tastes absolutely divine. This is similar to maharashtrian batata vada recipe. Will share that version also soon in blog. I first tasted these aloo bonda in Coimbatore. These are very famous street in Tamil nadu. I made aloo bonda many times which tastes really awesome,just as storebought ones.we here in Andhra makes bonda with rice and urad dal, will share that recipe some other day.

Makes 12 bondas

Ingredients :

For batter :

Gram flour/besan/chanaga pindi : 200 grams
Cooking soda/baking soda : 1/4 tea spoon
Turmeric powder : 1/2 tea spoon
Chilly powder : 1 tea spoon
Salt to taste

Oil for deep frying

For filling :

Large potatoes : 3
Chopped large onions : 1
Chopped green chilly : 1
Chopped ginger : 1 tea spoon
Hing/inguva : 1/4 tea spoon
turmeric powder : 1/2 tea spoon
Mustard seeds : 1 tea spoon
Cumin seeds : 1 tea spoon
Chopped curry leaves : 2 tea spoons
Oil : 1 table spoon
salt to taste
Chopped coriander leaves : 2 table spoons

Method :

First boil potatoes,peel the skin and mash potatoes coarsely and keep it a side.

Now heat 1 table spoon of oil in a pan add mustard and cumin seeds, let them crackle.

Now add green chilly,ginger and curry leaves saute for a while. Then add onions and saute for 2 to 3 minutes.

Now add turmeric powder and saute it.

Now add mashed potatoes and coriander leaves and saute for 2 minutes and remove from fire.

Now let the mixture cool completely.

Now start making batter, take flour in a bowl add all remaining ingredients and mix it well. Then add water little by little and make a smooth batter without lumps.batter should not be thick nor thin.

Now take cooled potato mixture and divide into equal portions and make round balls.

Now dip these balls in batter and coat it well with batter and drop them in hot oil. 

Fry on both sides until they changes into golden color,take them into a plate and serve hot.

Boil and peel potatoes

Mash them coarsely

Heat table spoon of oil in a pan add mustard seeds
Add cumin seeds and Hing,let them crackle

Now add chilly, ginger and curry leaves saute for a while

Now add onions

Saute them

Add turmeric powder and saute it

Add mashed potatoes and coriander leaves

Saute for a while and remove from fire

Let it cool completely

To make batter, take flour and all remaining ingredients in a bowl

Mix it well

Add water little by little and make a smooth batter

Take cooled potato masala and make round balls


Dip them in batter

Coat it well with batter

Drop them in hot oil

Fry until they changes into golden color and take into a plate

Serve hot...

FISH CUTLETS RECIPE/FISH PATTIES RECIPE



Baking cakes and cupcakes from morning, because tomorrow is my darling daughter rida's birthday!!!!!! She want distribute cupcakes in her school which are made by me. I said "ok done". She is very excited and me too!!!! Will sure share that birthday cake recipe with you all.

     Ok, now coming to today's recipe, yesterday made these yummy fish cutlets which tastes really awesome. Process is also so easy to make. Perfect to serve them as starters or as tea time snacks.

Ingredients :

Boneless fish : 400 grams (any boneless fish can be used)
boiled and peeled potatoes : 200 grams
Finely chopped onions : 1 (large)
chopped green chilly : 1
Chopped coriander leaves : 1/2 cup
Pepper powder : 1 tea spoon
Chilly powder : 1/2 tea spoon
Garam masala powder : 1 tea spoon
Turmeric powder : 1/2 tea spoon
Coriander powder : 2 tea spoons
Oil : 2 tea spoons
Oil for deep frying
eggs : 2 (beaten)
Bread crumbs : 1 cup or as needed
Salt to taste
Lemon juice : 2 tea spoons
Ginger garlic paste : 1 1/2 tea spoons

Method :

First boil fish in water for few minutes, drain water and take into a bowl, then shred it.

Now add boiled, peeled and mashed potatoes, salt and lemon juice mix it well and keep it a side.

Now take a pan add 2 tea spoons of oil add onions and green chillies ,saute until they changes into golden color

Now add ginger garlic paste and saute until Rae flavors disappear

Now add all spice powders and Coriander leaves then saute for few seconds on medium heat.

Now add mashed fish and potato mixture and saute for couple of minutes and remove from fire.

Now let the mixture cool completely then take small portions of fish mixture and make patties, dip them in beaten egg then roll in bread crumbs and drop them in hot oil.

Fry on both sides in medium to high flame. On both sides ,take them into a plate and serve.

Boil fish and take into a bowl

Shred fish pieces

Add mashed potatoes

Squeeze lemon

Mix it and keep a side



Add ginger garlic paste and saute for a while

Add all spice powders

Add coriander leaves

Saute for few seconds

Add mashed fish mixture

Stir it well, saute for couple of minutes

Remove from fire and let it cool completely

Beat eggs in a bowl and keep a side

Make patties like this

You can make any shape as per your choice

Dip in beaten eggs

Roll them in bread crumbs

Now drop them in hot oil on both sides

Take them into a plate

FALAFEL RECIPE/ARABIC DISH FALAFEL RECIPE


Falafel is a popular arabic dish. Deep fried balls or patty made from ground chick pea. Falafel is a traditional Egyptian and middle eastern street food commonly served in a pita bread or can make sandwich. Falafel may also be eaten Alone as snack or can be served as starter.

          actually this falafel tastes best with tahini sauce. But I served with tomato sauce which also tasted good. But will sure share tahini dip soon with you. You can easily make this recipe with easily available ingredients in your kitchen. Kids will definitely love them a lot.

Ingredients :

Chick peas : 1 cup
Garlic cloves : 5
cumin powder : 1 tea spoon
Coriander powder : 1 1/2 tea spoons
Chilly powder : 1 tea spoon
roughly chopped onions : 1
coriander leaves : 1 cup
Parsley : 1 cup
Salt to taste
Oil for deep frying

Method :

First soak and wash chick peas for 8 hours or overnight.

Now drain the water and add it to a blender. Blend it coarsely.

Now add all ingredients except oil and blend it into a coarse paste. (I used dried parsley, if you have fresh parsley please do add it)

Now make them into round balls or as per your choice.

Now drop them in hot oil and fry on both sides until they changes in to golden color and serve.

Note :

Add 2 tea spoons of rice flour for binding

Soak chick peas for overnight

Take them into a blender

Blend it coarsely

Add onion and garlic

Add coriander leaves

Add all spice powders

Add salt

Add parsley

Blend into coarse paste without adding water

Take this mixture into a bowl
Roll them into a shape

Drop them in hot oil



Fry on both sides until golden color

Take them into a plate



Serve hot!!!!
