CHETTINADU EGG CURRY RECIPE


Chettinad egg curry is a very famous dish in tamil nadu. It tastes so yummy and also spicy too. It not as regular egg curry recipe. This dish is filled with freshly grounded spices and lots of beautiful aroma. This is so simple and easy dish.There are so many varieties in chettinad chicken, like chettinad pepper fry, chettinad chicken fry etc., which I'm going to share in this blog in my future posts. You can serve this with any roti or rice. But, tastes absolutely divine.i hope you will give this a try and let me know how it turned out for you.


Ingredients :


Hard boiled eggs : 4
Chopped medium tomatoes : 2
chopped medium onions : 2
ginger garlic paste : 1tea spoons
Curry leaves : 2 strings
chopped coriander leaves :  2 table spoons
Chilly powder : 1/2 tea spoon
Turmeric powder : 1/2 tea spoon
Salt to taste
oil : 3 table spoons
Mustard seeds : 1/2 tea spoon


For chettinad masala :


Dried red chillies : 2 
pepper corns : 1 tea spoon
Fennel seeds/sounf : 1 tea spoon
Cumin seeds/jeera : 1/2 tea spoon
Coriander seeds : 2 table spoons
Dried or fresh coconut : 1/4 cup
Star anise : 1
Poppy seeds : 1 tea spoons
Cinnamon sticks : 1(inch size)
cloves : 2
cardamom : 1

Method 

First take all chettinad masala ingredients, dry roast them for 2 to 3 minutes and remove from fire.

Now let it cool completely and blend into a fine powder. Then add some water and blend into a fine paste.

Now heat oil in a pan add mustard seeds and let them crackle,then add chopped onions and saute until they changes into light golden color.

Now add ginger garlic paste and saute until raw flavors disappear.

Now add curry leaves and saute for few seconds, then add tomatoes and cook until they turns soft.

Now add grounded masala and saute for 2 to 3 minutes.

Now add chilly powder,turmeric powder and salt saute until oil leaves pan sides.

Now add 350 ml of water and add hard boiled eggs to it.

Stir it well and cover with lid. Cook until gravy becomes thick by stirring in between.

Finally add coriander leaves and cook on low flame for couple of minutes,remove from fire and serve hot.

Take all masala ingredients

Dry roast them for few minutes

Let it cool completely and take it into a blender

Blend into a fine powder

Add some water and blend into a fine paste

Now heat oil in a pan,add mustard seeds

Add onions

Add curry leaves and saute until they changes into golden colour

Now add ginger garlic paste saute well

Add tomatoes and cook them well

Now add blended masala


Cook until oil leaves pan sides

Now pour some water

Drop boiled eggs

Stir it well and cover with lid

Cook until gravy becomes thick by stirring occasionally

Finally add coriander leaves

Cook on low heat for couple of minutes and remove from fire

Serve hot!!!!

EGG DROP CURRY RECIPE/KODI GUDDU KOORA RECIPE



Hi Friends, I'm back with 'cooking for beginners' series. Today I'm going to share tasty egg drop curry recipe. It is so easy to make and very yummy in taste. It well goes with any rice or paratha.also you can easily prepare this dish in minutes. I hope you will give this a try and let me know how it turned out for you.


Servings : 3


Ingredients :


Eggs : 4
Large onions : 2
Medium tomato : 1
Slitted green chillies : 2
Small cinnamon piece : 1
Cloves : 2
Ginger garlic paste : 1 tea spoon
Coriander powder : 1 tea spoon
Chilly powder : 1/2 tea spoon
Turmeric powder : 1/2 tea spoon
Salt to taste
Coriander leaves : 2 table spoons
Oil : 2 table spoons

Method :


First heat oil in a pan add cinnamon and cloves, then add onions and green chillies and saute for 2 to 3 minutes.

Now add ginger garlic paste and saute until raw flavors disappears.

Now add tomatoes and cook them well. Now add Salt,chilly powder,turmeric powder and coriander powder. Saute for few seconds.

Now add 250 to 300 ml of water and bring it to a boil.

Now break eggs and drop them into curry.

Cover the lid and cook on medium to High flame until water dries then add coriender leaves and serve.

Bring it to a boil

Break and drop eggs

Now it's done,finally sprinkle some coriander leaves

BAKED EGG PARCELS RECIPE


Alhumdulillah, it's already 3rd roza today and I'm going to share 4th ramzan recipe. That is baked egg parcels recipe. Baked egg parcels are perfect to serve in iftar and any other parties. Making egg parcels are also very easy. This recipe is inspired from yummy tummy website. It turned really pretty good. If you find puff pastry sheets in your place then replace puff pasty sheet instead of pizza dough.

Ingredients :


Pizza dough : (recipe here)

For filling :

Hard boiled eggs : 3
Medium sliced onions : 4
Curry leaves : 2 strings
Chopped coriander leaves : 1/3 cup
Salt to taste
Turmeric powder : 1/4 tea spoon
Ginger garlic paste : 3/4 tea spoon
Chilly powder : 1/2 tea spoon
Coriander leaves : 1 tea spoon
Oil : 2 table spoons
Garam masala powder : 1/2 tea spoon

Egg : 1

Method :


First start making dough (recipe here). Place it in warm place for 1 hour or until it raises into double in volume.

Now to make filling, heat oil in a pan add onions,curry leaves and saute for 2 to 3 minutes.

Now add ginger garlic paste and saute for 1 minute or raw flavor disappears.

Now add all spice powders and saute for few minutes on medium flame. Now add coriander leaves and saute for 1 minute, then remove from fire. Let it cool completely.

Now take boiled eggs and cut them into halves and keep a side.

Now take risen dough and punch down the air. Knead it for few minutes and divide into 6 equal portions.

Now roll each portion into small chapathi shape and put some onion filling in the middle, then put egg over it.

Now fold it from all the sides as shown in the pic and insert a clove.

Now grease oil to your baking pan and arrange egg parcels in it.

Now keep this tray in warm place for 20 minutes.

Now give them a egg wash and bake at 200 degrees Celsius for 25 to 35 minutes or until they changes into golden color in preheated oven. (preheat oven for 10 minutes in 200 degrees)

Now yummy baked egg parcels are ready!!!!

Prepare your pizza dough (Click here for recipe)

Meanwhile heat oil and add onions

Add curry leaves and saute for 2 to 3 minutes

Now add ginger garlic paste

Saute well

Now add salt, all spice powders and saute for few minutes on medium flame

Add coriander leaves, saute for 1 minute

Remove from fire

Let it cool completely

Take hard boiled eggs

Cut them into halves

Grease butter or oil to your baking pan and set a side

Take your raisen dough and punch down the air

Knead it for few minutes

Divide into 6 equal portions

Roll into small roti by dusting some flour

Place onion mixture and egg

Fold it like this

And like this

Insert a clove

Arrange them in Baking tray and place it in warm place for 20 minutes

Now apply egg wash well and bake it

Tasty egg parcels are ready
