Gajar ka halwa/carrot halwa

I know this is everyones favourite desert.......one of my viewer requested this sweet recipe,how can I ignore or refuse to make this yummy dish!? So one day I planned to make this yummy carrot halwa!!!!!

                  There is one another reason to make this carrot halwa,that is my hubby.....:)

            Hubby is coming home after 25 days from his business trip!!!!!! So, I was really happy and prepared this halwa for him. Hubby don't like cakes or pastries,he only likes traditional food. So I always try to make traditional food for him.

                          Ok,coming to this recipe,carrot halwa is a most popular dessert in India, that we love to eat a lot!!!!!
no one can refuse to eat this yummy sweet.
grated carrots/gajar cooked in milk,condensed milk/khoya and lots of nuts.

                         I used my homemade condensed milk for this recipe,check blog posts for homemade condensed milk recipe.you can also add khoya.

 heat ghee in a pan fry nuts and take them in a bowl.add grated carrots saute them and pour milk stir it
 Cook carrots by covering the lid till carrots are soft.add sugar
 Add condensed milk and cardamoms cook till it is done.stir in between and add nuts before serving


Ingredients :

Grated carrots /Gajar : 500 grams
Milk : 1 liter
Condensed milk /khoya/kova : 1/2 cup
Sugar : 400 grams
Cardamom : 4 (crushed)
Ghee : 1/3 cup
Cashew nuts/almonds/pistachios : 1/4 cup

Preparation :

1)heat ghee in a pan,add nuts and fry them till light golden color and take them in a bowl and keep a side. (I used sliced almonds)

2)in same pan add grated carrots and saute for 5 to 6 minutes or till the raw flavours disappears.

3)now pour warm milk to it and cook till carrots are cooked by covering the lid.

4)stir in between

5)when carrots are done add sugar,condensed milk and crushed cardamoms and stir it.(you can also add cardamom powder)

6)cook till sugar is completely dissolves and it comes to nice halwa consistency.

7)now switchoff the flame and sprinkle fried nuts and serve.
