Vegetable dum biryani is a royal dish that is aromatic and delicious.making dum biryani is Very easy.
Dum biryani is prepared with fresh vegetable and lots of masalas,as we all know vegetable dum biryani is quite popular across the world.one of my viewer requested this recipe.i used my homemade biryani masala in this recipe,Check blog posts for homemade biryani masala recipe.
I added vegetables like French beans,carrots and beans. You can also add your favourite veggies like, cauliflower,capsicum. We can add paneer too.
Ingredients :
Basmati rice : 1 kg
Curd : 300 ml
Carrots : 1 cup (cut into 1 inch size)
French beans : 1 cup (cut into inch size)
Fresh/frozen peas : 1 cup
Cubed potatoes : 2 (medium size)
Sliced medium onions : 3
Ghee : 1/3 cup
Oil : 1/2 cup
chilly powder : 1 tspoon
Coriander powder : 1 table spoon
turmeric powder : 1/4 tspoon
Green chillies : 2 (Chopped)
biryani masala : 1 tspoon
Lemon juice : 2 table spoons
Salt to taste
Ginger garlic paste : 1/3 cup
keora water / kewda jal : 2 table spoons
chopped coriander leaves : 1/2 cup
Chopped mint leaves : 1/2 cup
cinnamon stick : 2 (inch size)
star anise : 1
shahi zeera /black cumin seeds : 1 tspoon
Cloves : 4
cardamom : 5
bay leaves : 2
saffron /yellow food colour : 1/4 tspoon
Preparation :
1)First take basmati rice wash 3 times and soak for 30 minutes
2)now take a pan heat oil and add onions fry them on medium flame till they changes into nice golden color and take them into a bowl
3)now take a big bowl add all veggies, add all ingredients (except,food color, keora water and ghee).add half of the fried onions and oil which we fried onions and mix well and marinate for 30 minutes( and keep half onions a side.) (take some coriander and mint leaves and keep a side)
4)now take a vessel pour water to cook rice,add 2 table spoons of salt and let it boil
5)when water comes to boiling stage add soaked rice and cook on high flame till rice is 70 % cooked .it takes 5 to 7 minutes
6)now drain the excess water from the rice
7)now take a heavy bottom pan put the marinated veggies and spread it evenly
8)now put half cooked rice on marinated veggies and spread it evenly
9)now sprinkle remaining fried onions,coriander leaves and mint leaves
10)pour ghee and keora water evenly
11) now mix food color /saffron in milk and pour on rice
12)cover the pan with lid and seal the edges with aluminum foil or ata dough
13)now cook on high flame for 3 to 5 minutes and reduce the flame
14)cook for 25 minutes in low flame
15) after 25 minutes switchoff the flame and leave for 10 minutes,then open the lid
16)mix masala and rice gently by sides
17)serve with raita and enjoy!!!!!!

boil water and add rice cook till it is 70% done and drain excess water
Take heavy bottom pan add marinated veggies spread it evenly and add rice on top and spread it evenly.....add coriander, and mint leaves,keora water,ghee,fried onions and food colour and cook on low flame
now it's done ( i used big non stick pan)
Mix gently from it's sides
After mixing it.....it looks like this
Serve hot with onion raita
