Hi, today I'm going to share another tasty south Indian style dahi vada. In telugu it's called perugu vada. Tastes absolutely amazing. Also easy to prepare. If you have any leftover vada at home you can easily make them within minutes. North Indian dahi vade or dahi bhalle recipe and taste is completely different from this recipe. But will sure try share north Indian style dahi vade recipe. You have them at any time. We also make dahi vada in another style, we make dahi kadi and soak vada for some time and will serve it. But this is the easy process to make dahi vade. Few years back I learnt this recipe from my Bade ammi who is a super cook, and everytime it turned out super delicious.

Ingredients for vada :
Urad dal/white lentils/minapappu : 250 grams
Salt : 1 tea spoon leveled
Cooking soda/soda bicorb : 1/4 tea spoon
oil for deep frying
To make dahi mixture ;
Yogurt/curd/dahi : 500 to 600 ml
Medium green chilly : 2
1 inch size ginger piece
Grated medium carrot : 1
salt to taste
Chopped coriander leaves : 1/4 cup
For tempering :
Oil : 1 tea spoon
Curry leaves : 1 string
Mustard seeds : 1/2 tea spoon
Method :
First wash and soak dal for 4 hours ,then take dal into a blender add salt and soda bicarbonatethen without adding water blend into a coarse paste.
Now take this into a bowl and beat it well with your hands until batter becomes lite and fluffy.
Now heat oil in a pan make vada shape and drop them in hot oil. Fry on medium flame on both sides until they turns into golden color. Then take them into a plate
Now take 1/2 litre of water and butter milk, add some salt and soak fried vade for 10 to 15 minutes.
Now take green chilly and ginger into a blender and blend it. Keep this a side.
While vade is soaking,take curd in a bowl whisk it well until smooth. Now add grated carrots,blended chilly and ginger, salt and mix it well. (if your curd is thick add some water)
Now to make tempering,heat oil In a pan add mustard seeds, let them crackle, then add curry leaves, now add this tempering to curd mixture and mix it well.
Now take soaked vada squeeze it gently and drop in tempered curd,just soak for 5 to 10 minutes and serve.
Soak dal for 4 hours |
Take into a blender |
Add salt and cooking soda |
Blend it coarsely |
Take this batter into a bowl beat it well for few minutes |
Make vada and drop them in hot oil |
Fry on both sides until they changes into golden color |
Take them into a plate |
Drop and soak them in butter milk or water For few minutes |
Now take green chillies and ginger into a blender |
Blend it coarsely |
Now take curd in a bowl, whisk it well |
Now add salt |
Add grated carrots |
Add chilly and ginger paste |
Mix it well |
Now make some tempering |
Add it to curd mixture |
Now take soaked vada, squeeze it gently |
Drop them in curd mixture |
Sprinkle some chopped coriander leaves |
Serve!!!!! |
