Vada pav is a famous street food in Maharashtra. Not only in Maharashtra it is now famous in all over india. This is nothing but our Indian burger. Instead of cheese, mayonnaise and sauses we use 3 different types of chutneies in making vada pav. They are Tamarind sweet chutney,green chutney and Garlic dry chutney. The key ingredients Are pav buns and bata vada, I have already shared two types of pav buns recipe Here and Here. The cool thing is you can have it in breakfast, dinner or in tea time. Though it takes some time to make, but it completely worth of time. You can use store bought chutneies and pav buns. But I made every thing at home. After all homemade is homemade.

Ingredients :
Batata vada ingredients : these ingredients makes 10 to 12 vadas
For batter :
Besan/gram flour/chanaga pindi : 300 grams
Salt to taste
Turmeric powder : 1/4 tea spoon
Chilly powder : 1/2 tea spoon
Soda bicarbonate/cooking soda : 1/4 tea spoon
For filling :
Boiled and peeled large popotatoes : 3
Ginger : 1 table spoon
Garlic cloves : 4 to 5
Green chillies : 2
Chopped curry leaves : 1 table spoon
Mustard seeds : 1 tea spoon
Cumin seeds : 1 tea spoon
Chopped coriander leaves : 2 table spoons or as per your choice
Turmeric powder : 1/2 tea spoon
Hing/asitofida : 1/4 tea spoon
Oil : 1 table spoon
Oil for deep frying
For serving :
Pav buns : 8 to 10 or as needed (recipe here)
Green chutney : as needed (recipe here)
Dry garlic chutney/lasun ki chutney : as needed(recipe here)
Imli ki meethi chutney/sweet chutney : as needed(recipe here)
Green chillies : as needed (make deep slits in middle)
Method :
Start making batter, take all batter ingredients in a bowl, mix it well, now gradually add water and mix without lumps
Batter should not be thick nor thin.
Now mash boiled potatoes and keep a side.
Now take, garlic, ginger and green chillies into a blender and blend it coarsely and keep a side.
Now heat 1 to 2 table spoons of oil in a pan Add mustard seeds and cumin seeds, let them crackle.then add curry leaves and saute for a while.
Now add ginger and chilly paste saute for few seconds,then add hing and turmeric powder saute for few seconds.
Now add salt, mashed potatoes and coriander leaves. Saute for few minutes and remove from fire.
Allow it to cool completely, then divide them into small portions and roll them into round balls.
Now drop these potato balls in batter and coat them well with batter.
Now gently drop them in hot oil and fry on both sides until they changes into golden color.
Now take all serving ingredients, make a slit in middle of the pav bun, apply some green chutney on one side, some meethi chutney on other side, then put some garlic dry chutney along with batata vada and taje a huge bite :)

Saute well |
Remove from fire and let it cool completely |
Make round balls |
Now to make batter add all batter ingredients |
Gradually add water and make a smooth batter |
Batter should not be thick nor thin |
Now drop potato balls in batter |
Coat potato balls well with batter |
Drop them in hot oil |
Fry on both sides until they changes into golden color |
Now take them into a plate |
Now drop some slitted chillies in oil (this is optional) |
Be careful while frying these chillies |
Now it's time to assemble |
Take pav bun make cut in middle |
Spread some green chutney on one side |
Spread some sweet chutney and garlic chutney on other side |
Place batata vada in middle |
Serve |
Yummy vada pav is ready!!!!! |
