BAKERY HONEY CAKE RECIPE

Honey cake is my favorite cake from childhood. I love the texture,color and taste so much. I tried honey cake couple of times and the taste was good. But this time I. Made exactly as bakery ones and the result was really amazing!!!!  It turned just as bakery ones. Texture,color and taste was same as bakery cakes.

            I baked basic vanilla sponge cake and dipped cake pieces in honey and sugar syrup then coated with my homemade desiccated coconut (recipe here) and topped with melted jam and whipped cream. They look really yummy, right?

Ingredients :

For vanilla sponge cake :

All purpose flour/Maida : 2 cups (200 grams)
sugar : 1 cup/200 grams
Eggs :3
Vanilla essence : 1 1/2 tea spoon
Oil : 1/2 cup / 100ml
baking powder : 1 1/2 tea spoons
Milk : 1/2 cup / 100ml

For honey syrup :

Water : 250 ml
Honey : 50 grams/1/4 cup
Sugar : 4 table spoons
Red food color : 1 pinch

For topping :

Mixed fruit jam : 3 to 4 table spoons

Whipped cream : as required (optional)

Desiccated coconut : 1/2 cup or as required for coating. (click here for recipe)

My one cup measures 200 ml

Method :

First start with baking cake

First blend sugar into fine powder.bring eggs to room temperature.

Now take mixing bowl add powdered sugar and eggs whisk it well for few minutes till it double in volume

Now add oil and vanilla essence whisk t for few seconds.

Now take a sieve add flour and baking powder. Sift it and add gradually into egg mixture and fold it gently.

Now pour milk and and mix it well without lumps.

Now take cake mold grease and line with parchment paper.

Now pour this cake batter to mold and spread it evenly and tap cake mold once.

Now bake this in preheated oven for 30 to 35 minutes in 175 to 180 degree centigrade. (preheat oven in 180 degrees centigrade for 10 minutes)

Now after baking insert a knife or toothpick if it comes out clean your cake is done.

Let the cake cool completely and run a knife around the cake and demold it.

Level the cake with knife.

Now cut them into pieces and keep them a side.

Now start making honey syrup. Add water and sugar to a pan stir it till sugar dissolves then add food color. then add honey and stir it for few seconds then remove from fire.

Now pour this syrup in any flat bowl or plate.

Now take one piece of cake  coat sugar syrup on all sides.

Now roll in desiccated coconut from four sides. (Leave the top side and bottom)

Now melt jam in a pan on medium heat and apply some jam on top of the cake.

Top with whipped cream or butter cream.

Yummy yummy honey cakes are ready to serve!!!!

Take eggs and powdered sugar in a bowl

Whisk it till it changes to pale yellow color

Now pour oil

Add vanilla essence

Whisk it for few seconds

Take a sieve add flour and baking powder

Sift half of the flour

Mix it well without lumps

Sift remaining flour and mix it well

Now pour milk

Mix it without lumps

Grease and line with parchment paper

Pour cake batter into mold

Bake it

Level the cake with knife

Cut into pieces

Now to make syrup add sugar to water mix it well

Add honey

Stir it

Add food color and cook for few second and remove from fire

Coat sugar syrup all over the cake

Now roll in desiccated coconut (don't coat on top and bottom of the cake)

Take into a plate

Now melt jam on medium flame by adding 1 tea spoon of water

Apply this jam on top of the cakes

Top with whipped cream or butter cream

Yummy honey cakes are ready to serve!!!
