Madata khaja is a popular sweet dish in Andhra pradesh. It also known as kakinada kaja in Andhra pradesh. Kakinada is a district in Andhra which is popular for this sweet. I have tasted this sweet many times but never tried at home. watched so many videos and I tried this yummy sweet and turned out so perfect as shop sweets (not shape lol).
It tastes absolutely delicious. It is crunchy and juice. This is also my last recipe for this Diwali. So wanted to post easy and tasty recipe.making this madata kaja is so simple and easy. But you need patience while frying kajas. They should be fried on medium flame. Then only they will cook from inside.

Ingredients :
All purpose flour/maida : 250 grams
Ghee : 4 table spoons
Pinch of salt
sugar : 300 grams
Cardamom powder : 1/2 tea spoon
oil for deep frying
Method :
First take flour add pinch of salt mix it well. Then add 2 table spoons of ghee mix and rub it well.
Now add water little by little and knead q soft dough and rest it for 20 minutes.
Now sprinkle some flour on clean surface and take dough roll into a thin sheet
Now spread 2 table spoons of ghee all over the sheet and sprinkle some flour on all over the sheet
Now roll gently roll the sheet tightly then apply some water on edges and seal it.
Now cut them into pieces, take one piece and just gently press on it with rolling pin and drop them in medium hot oil
Fry on medium heat until they changes into golden color by turning on both sides.
While kajas are frying take sugar add 1 cup of water and boil until it turns to one string consistency. Add cardamom powder and remove from fire.
Now add fried kajas in sugar syrup and soak for 5 minutes then take out kajas from sugar syrup into a plate let them cool completely and serve yummy kajas.

Mean while boil sugar syrup to one string consistency add cardamom powder |

Fry kajas on medium heat |

Fry until they turns into golden color |

Drop them in prepared sugar syrup |

Soak for 5 minutes |
|
Take kajas into a plate |
|
Let them cool completely |
