chole masala is a popular dish in India and Pakistan. Chole masala is made with chick peas and lots of spices and flavors. This dish tastes really awesome. But partner of this yummy chole bhature. This combination is made for each other. Will share bhatura recipe in my next post.
I made this recipe in my way with traditional touch.you don't need any storebought chole masala powder for this recipe. You can make your own homemade fresh masala. You may think how! Wait,Wait I will show you how to make chole masala without storebought masala powder.dried anaardaana (pomegranate seeds)goes in this dish but dried anaardaana is not available in my place so, I have not added in this recipe.but tastes really great.if dried pomegranate seeds are available in your place you just crush them add it this gravy.

ingredients :
Chick peas/chana : 200 grams
Tomatoes : 4 (pureed) medium size
Medium onions : 2 (pureed)
Chopped coriander leaves : 1/3 cup
Ginger garlic paste : 1 tea spoon
Hing/inguva/asafoetida : 1/4 tea spoon
Turmeric powder : 1/2 tea spoon
Chilly powder : 1 tea spoon
dried mango powder/amchur powder : 1/2 tea spoon
oil : 3 table spoons
Salt to taste
For masala powder :
Coriander seeds : 1 table spoon
cumin seeds : 1 tea spoon
cardamom : 1
cloves : 3
star anise : 1
Black pepper corns : 1/2 tea spoon
Cinnamon : small piece
Bay leaf : 1 (small)
Method :
First soak chick peas for 6 to 8 hours or overnight. Add some salt and boil chick peas until well cooked.
Now take some boiled chick peas in a bowl mash them well and keep a side.
Now take all masala powder ingredients in to a blender, blend into a fine powder.
Now heat oil in a pan add onion paste and ginger garlic paste saute until it changes into golden color
Now add all dry masalas and blended chole masala powder,saute for few seconds
Now add tomato puree and cook until it gets dry.
Now add boiled chick peas and mashed chick peas stir it and add 3 cups of water,cover and cook until gravy gets semi dry. (stir in between)
Finally add coriander leaves and cook on low flame for few minutes and serve.

Take some cooked chick peas and mash them |
Take all masala powder ingredients |
Take into a blender |
Blend it into a fine powder |
Heat oil add onion paste |
Add ginger garlic paste |
Saute well |
Add blended masala |
Add remaining spice powders |
Saute for few seconds |
Add tomato puree |
Cook it well |
Add boiled chick peas and mashed chick peas |
Stir it |
Add water |
Cover and cook it |
Finally add coriander leaves and serve |
Tasty chole masala is ready to serve |
