200th post!!!!!! Yes, today I'm celebrating my 200th post with this beautiful eggless honey cake!!!!! Voyla!!!!!! Feeling really happy and excited, also my blog crossed 3 lakhs hits in 8 months!!!!! Time to celebrate this happy moments......Thank you so much everyone for your love,support and encouragement. So, made this eggless honey cake with whipped cream frosting. Cake turned to be perfect and juicy.
Ok, coming to this recipe, when I posted my bakery style honey cake
(recipe here) so many readers requested me to post eggless version in honey cake. So decided to make a yummy eggless honey cake recipe.I used my
eggless wheat flour cake recipe to make vanilla sponge cake, just replaced wheat flour with maida. Frosted with whipped cream. It is completely optional. I just turned this cake as celebration cake. If you want you can cut into pieces and serve as I did
here.

Ingredients :
All purpose flour/maida : 1 1/4 cup
Powdered sugar : 1/2 cup
Baking powder : 1 tea spoon
Warm milk : 1/2 cup
Vanilla essence : 1 tea spoon
oil : 1/2 cup
Mixed fruit jam : 3 table spoons
whipped cream : as needed (optional)
For honey syrup :
Sugar : 2 table spoons
Water : 1 cup
Honey : 2 table spoons
red food color : 1 pinch (optional)
My 1 cup measures 200 ml
Method :
First grease and line with parchment paper to 6 or 7 inch cake tin and keep it a side.
Now take oil in a bowl add powdered sugar and mix it well.then add condensed milk, vanilla essence and milk,whisk it well.
Now take a sieve add flour and baking powder sift it and add it to wet ingredients and mix it without lumps.
Now pour this batter to prepared cake tin and bake for 20 to 25 minutes in 180 degrees. (preheat oven in 180 degrees for 10 minutes)
Mean while to make honey syrup take water and sugar in a bowl let it boil for 1 minute then add color and honey boil for few seconds and remove from fire.Let it cool completely.
Now take baked cake let it cool completely and demold it.
Pour sugar syrup generously all around the cake.
Now melt jam with 1 tea spoon of water and spread on cake. Coat cake sides with desiccated coconut and decorate with whipped cream frosting and serve.

It's done now, let it cool completely |

Add color and honey boil for few seconds and remove from fire |

Let it cool completely |

Flip the cake and sprinkle honey syrup generously on all over the cake |

Melt some jam in a pan |
|
Spread it evenly |
|
Coat with desiccated coconut on all sides |
|
Decorate with whipped cream frosting like this |

It's all done now |
|
Slice and serve!!!! |
