Hi, today I'm going to share another yummy mutton recipe, that is Hyderabadi mutton dalcha. Mutton cooked with lentils and bottle gourd along with lots of aromatic spices.It is mostly served with biriyani and pulao in hyderabadi weddings. It tastes really yummy with biryani, pulao, plain pulao and white rice.
I often prepare this mutton dalcha at home and serves with bagara rice and biryani. If you are a vegtarian you can replace mutton with brinjals. It also tastes good.

Ingredients :
Mutton : 500 grams (with bones)
Chana dal/ bengal gram: 150 grams
bottle gourd/sorakaya/lauki/kaddu : 500 grams (pieces)
Sliced medium onions : 2
chopped Medium tomatoes : 4
green chilly : 2
coriander leaves : 1/4 cup
Tamarind : 25 grams
chilly powder : 2 tea spoons
Coriander powder : 1 table spoon
Roasted cumin powder : 1 tea spoon
Turmeric powder : 1/2 tea spoon
oil : 1/4 cup
Salt to taste
Curry leaves : 3 strings
Ginger garlic paste : 1 table spoon
Whole garam masala :
Cinnamon stick : 2 (1 inch size)
Cloves : 5
cardamom : 4
Shah zeera/black cumin seeds : 1 tea spoon
Method :
First wash dal and cook until dal gets soft.
Now soak tamarind in water for 15 to 20 minutes ,squeeze and take out the juice.
Now heat oil in a pressure cooker or pan add whole garam masala, add onions, green chilly and curry leaves saute for 2 to 3 minutes
Now add ginger garlic paste and saute until raw flavors disappear
Now add tomatoes and saute for 3 to 4 minutes.
Now add all spice powders and saute for 1 minute on medium flame.
Now add mutton pieces saute for 4 to 5 minutes
Now pour sufficient water and cook till mutton gets soft and tender
Now add bottle gourd pieces and cook till bottle gourd pieces gets soft. (add water if needed)
Now add tamarind juice and cooked dal add sufficient water and cook on high flame for 5 minutes by covering the lid
Now simmer the flame and add coriander leaves cook for 3 to 5 minutes and remove from fire and serve.

mash cooked dal well |
Soak tamarind water |
Squeeze tamarind juice |
Heat oil add whole garam masala |
Add onions |
Add green chillies |
Add curry leaves saute for a while |
Add ginger garlic paste |
Add tomatoes saute for few minutes |
Add all spice powders |
Add mutton pieces |
Saute for Few minutes |
Add water |
Cook till Mutton gets tender |
Mutton is cooked well |
Add bottle gourd pieces |
Pour water |
Cook it well |
Now add mashed dal and tamarind |
Cook for 5 minutes |
Finally add coriander leaves and cook on low flame for few minutes And switch off the flame |
It's done now |
Serve hot!!!!! |
