Had a wonderful eid and I'm back, with another wonderful recipe that is chicken tikka biryani. Today prepared this awesome biryani for lunch and my family loved it to the core. I love the smoky flavor in this biryani.
chicken marinated in yogurt, and lots of Indian spices and dum with basmati rice makes yummy biryani.trust me it tastes exactly as restaurants.my hubby gave me huge complement after tasting this biryani that it tastes exactly as restaurants I love to hear these words from him.......

Ingredients :
To cook rice :
Basmati rice : 1 kg
Cardamom : 4
Cinnamon : 4 (small pieces)
bay leaf : 1
shahi zeera/black cumin seeds : 1 tspoon
Salt : 1 1/2 table spoons
green chillies : 2
To make tikka masala :
Chicken : 1 kg
Yogurt/curd : 400 grams (2 cups)
Ginger garlic paste : 2 table spoons
Lemon juice : 1/4 cup
Chat masala : 1 table spoon
red chilly powder : 2 tea spoons
Coriander powder : 1 table spoons
Salt to taste
Oil : 3/4 cup (150 grams)
Garam masala : 1 1/2 tea spoons
Red food color : 1/4 tea spoon
For layering :
Chopped green chillies : 4
Chopped coriander : 1/2 Cup
Chopped mint leaves : 1/2 cup
Milk : 1/4 cup
Pinch of saffron/yellow food color
Ghee : 2 table spoons
Fried onions : 1 cup
Method :
First wash and soak rice for 1 hour
Now take chicken pieces add all tikka masala ingredients (except oil) mix well and keep a side for 30 minutes to 1 hour.
Now take a heavy bottom vessel add 3/4 cup of oil heat it and add marinated chicken into oil then add half of the fried onions and stir it.
Cover with lid and Cook till water dries stir in between (don't dry too much we need some thick gravy in it)
To give a smoky tikka flavor : take a charcoal put on fire and heat it.
Put a small bowl or aluminum foil on cooked chicken masala put this charcoal init pour few drops of oil on charcoal and cover with lid and leave it for 2 minutes.
now after 2 minutes take out the charcoal and aluminum foil from chicken masala.
While chicken is cooking put a Big vessel on other burner add plenty of water to cook rice. Bring it to boil
When water is boiling add whole Garam masala,chilles,salt and soaked rice
Cook till rice is 90 percent done then drain the water and keep this cooked rice a side
Now take another clean vessel put one layer with rice then make another layer with chicken masala sprinkle some fried onions, mint leaves,coriander leaves and green chillies.
Again put some rice and repeat the same process till it is done
Now mix saffron/food color with milk and pour this on top then pour ghee and cover with lid and cook on low flame for 10 minutes and remove from fire.
Mix gently before serving.....yummy chicken tikka biryani is ready!!!!!!!!!!

Add chat masala |
Add ginger garlic paste |
Add coriander powder |
Chilli powder |
Garam masala |
Salt |
Add curd |
Add red color |
Mix it well |
Marinate for 1 hour |
Boil water in a vessel add whole Garam masala, salt,chilles and soaked rice |
Cook till 90% done |
Drain the water |
Heat oil |
Add marinated chicken |
Add fried onions |
Cook till chicken is tender |
It's done now(we need some thick gravy in it) |
Lighten charcoal |
Place a bowl or aluminum foil and put lightened charcoal then pour few drops of oil |
Cover with lid |
Take out the charcoal and aluminum foil |
Tikka gravy is ready |
Take a vessel layer with cooked rice |
Layer with chicken tikka masala |
Sprinkle fried onions,coriander leaves,mint leaves and green chillies |
Repeat the same process |
Finally mix some yellow food color/saffron with milk pour on top,then pour some ghee sprinkle some coriander leaves cook on low flame for 10 minutes by covering the lid. |
