Dum ke sewiyan special dish which we prepare for ramzan. This dish is made with very thin vermicelli, khoya,sugar and lots of nuts.making dum ke sewiyan is so simple and easy. Once you know that trick to make this sewiyan no one can stop you.
One of my viewer requested this recipe,I made a big batch of dum ke sewiyan on eid to share with friends and my kids school teachers.that whole batch was finished with in two days.hubby wants some more Sewiyan for his Friends who lives in Coimbatore.again yesterday made this sewiyan.so,thought to share this recipe here.

Ingredients :
Thin sewiyan/vermicelli : 250 grams
Sugar : 750 grams
khoya/kova : 200 grams
Ghee : 100 grams
nuts (almonds,cashew nuts,chirongi,musk melon seeds) : 200 grams
Hot boiling water : 800 ml
cardamom powder : 1 tea spoon
Method :
First take a heavy bottom pan pour ghee then add nuts and fry till they changes into light golden color then take them into a plate.
Now break vermicelli into small pieces add into the pan
Fry vermicelli till golden color in medium flame by stirring continuously. then add hot boiling water to it stir continuously when water dries then add sugar Cook on high flame for 2 minutes by stirring continuously.
Now mix some hot water or milk to khoya and make a smooth paste
Now add this khoya to sewiyan and stir continuously for 2 minutes then add cardamom powder and nuts stir it and cover with cloth and lid as shown in the picture then cook on low flame for 2 minutes and remove from fire
That's it yummy dum ke sewiyan is ready to serve!!!!!
NOTE : vermicelli should be fried nicely.
Always add hot boiling water to vermicelli.
If you add good amount of sugar as mentioned above you can store upto 1 week without refrigerator

Fry nuts |
Take your sewiyan,they should be like this |
Add sewiyan to ghee |
Fry till they changes into golden color |
Pour hot boiling water |
Stir it |
Add sugar |
Stir it well |
Cook for a while |
Mix khoya with hot milk or water |
Add khoya And stir it weren't |
Add cardamom powder |
Add nuts |
Cook on low flame for 2 minutes by covering with cloth and lid |
It should be like this consistency then remove from fire |
It's done now |
