Gulab jamun is one of the famous sweet in India.there are many types of gulab jamuns like milk powder gulab jamuns,bread gulab jamuns,potato gulab jamuns etc., I'm going to share more gulab jamun recipes in my blog.but,this khoya gulab jamuns are very soft,juicy and tasty.
I always prepare gulab jamuns in this way. Yesterday prepared these gulab jamuns, so thought to share this recipe here.
The main ingredient you need for this recipe is khoya/kova click here for recipe. You can also use store bought khoya.but I like to use HOMEMADE khoya/kova.after all nothing can beat homemade food.

Ingredients :
khoya/kova (click here) : 1 cup
Maida : 1 1/2 cup or as needed
soda bicarbonate : 1/2 tea spoon
Milk : as needed
Ghee : 2 table spoons
Oil for frying
For sugar syrup :
Sugar : 2 cups
Water : 2 cups
Cardamom : 2 (crushed)
My one cup measures : 200 ml
Method :
First take khoya/kova in a bowl add maida and soda bicarbonate mix it well with hands.
Now pour some milk and ghee then knead it into a smooth dough and rest it for 10 minutes.
While dough is resting make sugar syrup, add sugar and water bring it to one string consistency by adding cardamoms.
Now take your dough knead for few seconds.take small portion of dough and make a round smooth balls.(make sure there are no cracks on top).
Now heat oil in medium flame drop these balls in oil and fry them on medium flame till they changes into nice golden color.
Now take out the fried balls from oil and drop them in sugar syrup.soak them for atleast 15 minutes in sugar syrup and serve.
NOTE : to make soft gulab jamuns knead dough for 10 minutes.
Always fry jamuns in medium flame.this makes gulab jamun cook from inside.
If you want more sugar syrup add some more sugar and water and make sugar syrup as needed.

To make sugar syrup take sugar add water |
Start boiling |
Add crushed cardamoms |
Bring it to one string consistency then remove from fire |
Take small portion of dough make a smooth ball |
Heat oil and drop the balls in oil |
Fry till golden color |
Drop them in sugar syrup |
Soak them |
Garnish with almond flakes and enjoy!!!!!! |
