HOMEMADE GUMMY CANDY/JUJUBES CANDY RECIPE


I enjoy making homemade candies and chocolates a lot. I have already shared few chocolate recipes in my blog. Here is the another addition of candy recipe. Making jujubes/gummy candies are so simple. First  I thought making these gummy candies are very tough. But I was wrong. It takes only 10 to 15 minutes to cook. But It takes hours to set. But result will be awesome.

       I wanted to try jujubes from long time and once I tried with China grass instead of gelatin. But they turned as soft pudding. But this time tried with gelatin and liquid glucose. They came out very well as shop bought gummy candies. My daughters were surprised by seeing these gummy candies in my hand!!!!!!

     If you don't have candy molds you can use any plastic container to set these candies.you can use any food color and flavors as per your taste.I used red,green and violet food colors and for flavors I used vanilla, orange and pineapple essence.

Ingredients :

Sugar : 200 grams 
gelatin : 25 grams
liquid glucose : 100 grams
lemon juice : 2 tea spoons
Food colors : as per your choice
Flavors : as per your choice
Hot water : 100 ml
Water : 100 ml
Sugar : 1/2 cup or as needed

Method :

First grease oil to your molds and keep a side.

Now take 100 ml of hot water add gelatin and mix it well and keep a side for 10 minutes and mix it gently until well dissolves

Now take sugar and 100 ml of water in a sauce pan cook on medium  until Sugar syrup reaches to hard ball stage when you drop in cold water.

Now add dissolved gelatin, liquid glucose and lemon juice stir it gently,  when you lift spatula you will notice thick strings at this stage remove from fire and divide into 3 parts then add colors and flavors mix it well and pour them into greased molds

Let them set for 7 to 8 hours in room temperature

Now gently demold candies and roll them in sugar and let them set for overnight and store in air tight container and serve. :-)




Grease oil to candy molds

Add gelatin to hot water

Mix it and leave for 10 minutes

Take sugar and water in a sauce posted

Let boil to hard ball stage

To check consistency drop few drops of sugar syrup in cold water

When it should form like a ball

Now dissolve gelatin well

Add gelatin to sugar syrup

Add liquid glucose

Add lemon juice mix gently on low flame

When you lift spatula you can see thick strings now remove from fire

Divide into 3 parts

Add colors and flavors

Mix them well

Pour them into molds and set for 7 to 8 hours


After 7 to 8 hours demold them gently

Roll them in sugar

Let them set for overnight


Yummy gummy candies are ready to eat!!!!

CHAPLI KEBAB RECIPE/PESHAWARI KEBAB RECIPE


Chapli kebab  is a popular pakistani dish made with mutton or beef. It is also known as Peshawari kebab. Making this chapli kebab is so simple and easy. You can serve this as starter or as evening snacks. You just need handful of ingredients, mix and marinate for few minutes,make patties and shallow fry them. That's it yummy chapli kebabs are ready to serve.

Ingredients :

Minced mutton : 500 grams
egg : 1(lightly beaten)
Finely Chopped medium onions : 2
Finely chopped medium tomato : 1 (remove seeds)
chopped coriander leaves : 1/2 cup
Chopped green chilly : 1
Ginger garlic paste : 1 1/2 table spoons
Salt to taste
oil : 1 table spoon
Rice flour : 2 table spoons
Coriander seeds : 2 table spoons
dried red chillies : 2
garam masala powder : 1 tea spoon
Roasted cumin powder : 1 tea spoon

Oil for shallow fry

Method :

First take coriander seeds and dried red chillies into a blender and blend it coarsely

Now take minced mutton add coarsely blended coriander seeds and all remaining ingredients and mix it well then marinate for 30 minutes

Now take some portion of minced mutton and make flat patties and drop them in hot oil and cook on medium heat by turning both sides.

Now take them into a plate and serve with onions and lemon wedges.

Take Coriander seeds and dried red chillies in to a blender

Blend it coarsely

Adds all ingredients along with blended coriander seeds

Mix it well

Marinate for 30 minutes

Make flat patties

Shallow fry them in hot oil on medium flame

Fry on both sides
Serve hot!!!!!

RUMALI ROTI RECIPE


Rumali roti is a thin flat bread originating from the India subcontinent.it is a popular dish in India and Pakistan. It is mostly served with tandoori dishes.it is a part of punjabi cuisine as well. The word  rumal means handkerchief in northindian languages and the name rumali roti means handkerchief bread.it is derived because of its structure like that. (source : wiki)

      Recently prepared this thin and soft rumali roti for dinner and served with yummy palak paneer. It tasted really awesome.whenever we go for restaurants we observe chefs making large thin parathas flying in the air and roatate them with their hands and roast them on hot tandoor kadhai. But we can't make  like them at home right. Don't worry,  I'm here to show you how to make thin and soft rumali roti at home. you need simple ingredients to make this recipe.  ingredients : makes 10 to 12 rotis

Maida : 1 1/2 cup (extra for dusting)
Wheat flour : 1 cup
Salt to taste
Oil : 2 table spoons
milk : 1/2 cup

Method :

First take Maida and wheat flour in a bowl add salt and mix it well

Now add oil and mix it well

Now add milk and knead into a dough. Add some water if required and knead into a smooth dough ,apply some oil on dough and rest it for 20 minutes by covering with wet cloth.

Now divide dough into equal portions and take one portion of the dough and roll it into thin roti. (roll the edges well by dusting with flour)

Now heat tawa and place roti on hot tawa after 5 to 6 seconds turn roti on other side and roast for few seconds and fold it as shown in the pictures. (it takes only 15 to 20 second to cook one roti) 

Now serve hot. 

Note :

Roll roti into very thin layer. You can observe my hand when I hold it.

Rolling edges is very important.

If you want to serve them later immediately put them in hot box by placing tissue paper in base. I served immediately after roasting.
Take both flours add salt mix it

Add oil

Rub it well

Add milk and water and knead into a smooth dough


Apply some oil on top

Rest it for 20 minutes

Take one portion of dough sprinkle some flour

Roll into thin roti

You can see my hand, it is very thin

Put this on hot tawa

Flip it

Fold it like this

Fold as handkerchief
Serve hot!!!
