BHATURA RECIPE/CHOLE BHATURE RECIPE


Bhatura is a fluffy deep fried bread from India. It is often eaten with  chole masala .making the traditional dish chole bhature. This combination tastes really awesome. A typical recipe includes Maida,yogurt,oil and baking powder or yeast. But today I used baking powder in this recipe. Once kneaded well, the dough is left to rise and then divided into equal portions of it are flattened using rolling pin,then deep fried until they puff into a lightly golden color.

Ingredients :

Maida/All purpose flour : 250 grams
curd/yogurt : 1/2 cup
Baking powder : 1 tea spoon
cooking soda/baking soda : 1/4 tea spoon
Salt to taste
Sugar : 1 table spoon

Oil for deep frying

Method :

Take flour in a bowl add Salt and mix it.

Now make a well in a middle  add curd and remaining ingredients. Mix it well.

Now add water and knead a sticky dough. Let it rest for 2 hours by covering the lid.

Now divide dough into equal portions and roll them.

Now drop them in hot oil and fry on both sides until they changes into golden color take into a plate and serve hot.
Mix salt and flour add curd

Add sugar, Baking powder and baking soda

Mix it well and add water knead into a soft dough

Rest it for couple of hours

Take small portion of dough sprinkle some flour

Roll it

Drop it in hot oil and press slightly on top with spatula

Fry on both sides


Take into a plate

Serve

CHOLE MASALA RECIPE/CHANA MASALA RECIPE


chole masala is a popular dish in India and Pakistan. Chole masala is made with chick peas and lots of spices and flavors. This dish tastes really awesome. But partner of this yummy chole bhature. This combination is made for each other. Will share bhatura recipe in my next post.

        I made this recipe in my way with traditional touch.you don't need any storebought chole masala powder for this recipe. You can make your own homemade fresh masala. You may think how! Wait,Wait I will show you how to make chole masala without storebought masala powder.dried anaardaana (pomegranate seeds)goes in this dish but dried anaardaana is not available in my place so, I have not added in this recipe.but tastes really great.if dried pomegranate seeds are available in your place you just crush them add it this gravy.

 ingredients :

Chick peas/chana : 200 grams
Tomatoes : 4 (pureed) medium size
Medium onions : 2 (pureed)
Chopped coriander leaves : 1/3 cup
Ginger garlic paste : 1 tea spoon
Hing/inguva/asafoetida : 1/4 tea spoon
Turmeric powder : 1/2 tea spoon
Chilly powder : 1 tea spoon
dried mango powder/amchur powder : 1/2 tea spoon 
oil : 3 table spoons
Salt to taste

For masala powder :
Coriander seeds : 1 table spoon
cumin seeds : 1 tea spoon
cardamom : 1
cloves : 3
star anise : 1
Black pepper corns : 1/2 tea spoon
Cinnamon : small piece
Bay leaf : 1 (small)

Method :

First soak chick peas for 6 to 8 hours or overnight. Add some salt and boil chick peas until well cooked.

Now take some boiled chick peas in a bowl mash them well and keep a side.

Now take all masala powder ingredients in to a blender, blend into a fine powder.

Now heat oil in a pan add onion paste and ginger garlic paste saute until it changes into golden color

Now add all dry masalas and blended chole masala powder,saute for few seconds

Now add tomato puree and cook until it gets dry.

Now add boiled chick peas and mashed chick peas stir it and add 3 cups of water,cover and cook until gravy gets semi dry. (stir in between)

Finally add coriander leaves and cook on low flame for few minutes and serve.

Soak chick peas

Cook them well

Take some cooked chick peas and mash them

Take all masala powder ingredients

Take into a blender

Blend it into a fine powder

Heat oil add onion paste

Add ginger garlic paste

Saute well

Add blended masala

Add remaining spice powders

Saute for few seconds

Add tomato puree

Cook it well

Add boiled chick peas and mashed chick peas

Stir it

Add water


Cover and cook it

Finally add coriander leaves and serve

Tasty chole masala is ready to serve

RAJMA MASALA CURRY/KIDNEY BEANS CURRY RECIPE

 I love Punjabi cuisine. I like to try all Punjabi dishes which are easy and tasty. I have already shared many Punjabi dishes in my blog. This recipe is another addition to it. Today I'm going to share rajma masala curry recipe. If you are looking for tasty and easy recipe for dinner, Then you should definitely try this recipe. I served this dish with soft phulka. Tastes really awesome.

Ingredients :

Rajma/kidney beans : 250 grams
Large onion : 1 (pureed)
Medium tomatoes : 3 (pureed)
coriander powder : 1 table spoon
Chilly powder : 1 tea spoon
Turmeric powder : 1/2 tea spoon
Cumin powder : 1/2 tea spoon
Garam masala powder : 1/2 tea spoon
Cumin seeds : 1/2 tea spoon
oil : 2 table spoons
Coriander leaves : 2 table spoons
salt to taste
ginger garlic paste : 1 tea spoon

Method :

First soak rajma for 4 to 6 hours and boil until rajma get cooked then keep this a side.

Now heat oil in a pan add cumin seeds let them crackle

Now add onion paste saute for 2 minutes then add ginger garlic paste saute until it turns into golden color.

Now add all spice powders saute for few seconds then add tomato puree and salt saute until mixture gets dry.

Now add boiled rajma saute for 1 minute then add 2 to 3 cups of water and cook on high flame by covering the lid.

When gravy becomes thick simmer the flame and cook for 2 to 3 minutes. Finally add coriander leaves and serve.

Soak rajma for 4 to 6 hours

Boil rajma until well cooked

Heat oil add cumin seeds

Add onion paste saute for couple of minutes

Add ginger garlic paste saute till raw flavors disappear

Add all spice powders

Saute for few seconds

Add tomato puree

Saute for few minutes

Add boiled rajma

Stir it

Add water


Cover with lid and cook till gravy becomes thick

You can adjust gravy consistency as per your taste

Finally sprinkle coriander leaves

Serve!!!
