PLAIN KULCHA RECIPE/KULCHA RECIPE WITHOUT YEAST AND TANDOOR




Hi......  Today I'm going to share an easy plain kulcha recipe. Kulcha is very famous in north India and Pakistan. There are different types of kulchas like paneer stuffed kulcha, mutton stuffed kulcha or potato stuffed kulcha. But today I'm going to share plain kulcha recipe. But don't worry, I will share above mentioned recipes in future posts. Kulcha is originally made with yeast and  baked in tandoor or oven, but today I'm going to show you, how to make without oven and on stove top. These kulchas well goes with any veg and non veg gravies. Tastes really amazing.

Ingredients :

Maida/all purpose flour : 300 grams
curd/yogurt : 1/2 cup/100ml
Salt to taste
Baking soda/soda bicarbonate : 1/2 tea spoon
Sugar : 2 table spoons
oil/ghee/butter : 2 table spoons
Finely chopped coriander leaves : 1/2 cup
Kalonji/onion seeds : 2 tea spoons

Method :

First take Maida in a bowl, make well in the middle, add curd and remaining all ingredients, (except coriander leaves) and  mix it well.

Now add water little by little and knead the dough for 10 minutes.

Now cover dough with damp cloth and rest it for 2 to 4 hours.

Now , after 2 to 4 hours knead the dough for few seconds and divide into equal portions.

Now take one portion of dough, dust some flour and roll it into thick kukcha.

Now sprinkle some coriander leaves and roll it gently with rolling pin.if you have kalonji, sprinkle some on top.

Now, flip kulcha and apply some water on it and place on hot tawa.

Now when you notice bubbles on top flip tawa and roast kulcha until you notice Brown spots.

Now take roasted kulcha in a plate and serve hot.

Add some water

Knead it for 10 minutes

Knead into a smooth dough

Roll it

Now flip kulcha and apply some water

Now place it on hot tawa and cook until you notice bubbles on top

Now flip tawa and roast kulcha on other side until you notice Brown spots

Now it's done

Serve hot!!!!!

BUTTER NAAN RECIPE/HOW TO MAKE BUTTER NAAN IN OVEN

Hi, today I'm going to share butter naan recipe in oven. I have already shared garlic naan recipe without oven and yeast (recipe here) It was a super hit recipe in my blog. But I want to share basic and original recipe of butter naan. Butter naan is traditionally baked in charcoal tandoor or grill. But it is not possible to everyone to carry tandoors or grills at home. Though we have tandoors at home every time it's not possible to light tandoor specially to make naan right? Infact I have charcoal grill at home, I made naan only when we have barbeque party at home. But I made it possible by making butter naan in oven. They turns so soft when we broil them in oven.it well goes with any veg or non veg gravies and tandoori dishes.If you want to make this recipe without oven then checkout this recipe.

 INGREDIENTS :

All purpose flour/maida : 250 grams
yeast : 2 tea spoons
Salt to taste
butter for greasing
Oil/butter: 2 table spoons
sugar : 2 tea spoons

Method :

Take yeast and sugar in a bowl add 1/2 cup of Luke warm water or milk,mix it well and set a side for 10 to 15 minutes

Now take flour and salt in a mixing bowl mix it well then add activated yeast mixture.

Knead into a soft dough by adding oil. Add some more water if required.

Now cover and let sit for 1 hour or until it rises into double in size.

Now take risen dough punch down the air and knead it for 2 minutes

Now divide dough into equal portions. Roll them into oval shape by dusting some flour.

Place them in greased baking tray

Now preheat oven in 250 degrees and broil for 3 to 5 minutes or until you notice Brown spots on top. (keep an eye while they are in oven, otherwise they May turn hard)

Now apply butter generously on naans and serve hot.
Take sugar and yeast in a bowl

Add Luke warm water and mix it well then set a side to activate the yeast

Take flour add salt

Mix it well

Add activated yeast

Add oil and knead it well

Knead into a smooth and soft dough

Cover and let it rise into double in size

Dough is risen well

Knead for couple of minutes

Take some portion of dough roll it

Arrange them in greased baking tray

Broil for few minutes

They are well cooked now

Apply butter generously

Serve hot

BHATURA RECIPE/CHOLE BHATURE RECIPE


Bhatura is a fluffy deep fried bread from India. It is often eaten with  chole masala .making the traditional dish chole bhature. This combination tastes really awesome. A typical recipe includes Maida,yogurt,oil and baking powder or yeast. But today I used baking powder in this recipe. Once kneaded well, the dough is left to rise and then divided into equal portions of it are flattened using rolling pin,then deep fried until they puff into a lightly golden color.

Ingredients :

Maida/All purpose flour : 250 grams
curd/yogurt : 1/2 cup
Baking powder : 1 tea spoon
cooking soda/baking soda : 1/4 tea spoon
Salt to taste
Sugar : 1 table spoon

Oil for deep frying

Method :

Take flour in a bowl add Salt and mix it.

Now make a well in a middle  add curd and remaining ingredients. Mix it well.

Now add water and knead a sticky dough. Let it rest for 2 hours by covering the lid.

Now divide dough into equal portions and roll them.

Now drop them in hot oil and fry on both sides until they changes into golden color take into a plate and serve hot.
Mix salt and flour add curd

Add sugar, Baking powder and baking soda

Mix it well and add water knead into a soft dough

Rest it for couple of hours

Take small portion of dough sprinkle some flour

Roll it

Drop it in hot oil and press slightly on top with spatula

Fry on both sides


Take into a plate

Serve
