SNOWBALL COOKIES RECIPE/RUSSIAN TEA CAKES/CHRISTMAS COOKIES RECIPE




      From today I'm going to share lot of Christmas recipes with you. Christmas is one of my favorite festival, because I  studied in infant Jesus public school in nellore. Our school has a grand Christmas celebrations every year. We kids used to enjoy those programs a lot and now we have a bunch of memorable moments with us.

Ok, now coming to this recipe,snowball cookies are yummy melt in mouth cookies. These are also known as Russian cookies,wedding cookies and Christmas cookies. These cookies tastes really amazing also pretty simple to make. They just melt in mouth when you take a bite. I prepared these cookies today itself and I can't stop myself from sharing this recipe with you all.


 Ingredients :

All purpose flour/maida : 1 cup/120 grams
unsalted butter : 100 grams
Granulated sugar : 3 to 4 table spoons
vanilla essence : 1 tea spoon
Finely chopped almonds or cashew nuts : 1/2 cup (I have coarsely blended)

Icing sugar or powdered sugar : 1/2 cup or as needed for coating cookies

Salt : 1/4 tea spoon

Method : 

First blend granulated sugar into fine powder 

Now take flour in to a bowl add blended sugar, finely chopped nuts, salt and mix it well.

Now add butter (room temperature) and vanilla essence, mix until all ingredients are well combined.

Now put this dough in refrigerator for 10 minutes and roll them into round balls and arrange in lined baking tray.

Preheat oven in 175 degrees for 10 minutes and bake cookies for 15 minutes in 175 degrees celsius.

Take out the cookies from oven, when they cookies are warm roll them in icing sugar or powdered sugar. Let them cool completely and give them another coat of icing sugar or powdered sugar and serve.

Blend sugar into fine powder



Take flour in a bowl add powdered sugar and salt

Add chopped nuts

Mix it well

Now add butter

Add vanilla essence

Mix until well combined

Refrigerate for 10 minutes

Roll them into round balls

Arrange them in lined baking tray

Bake them

Roll them in icing sugar or powdered sugar


Take into a bowl

BEST CHOCOLATE CUPCAKES RECIPE


Hi, hope you all enjoyed your sunday. Today I'm going to share best yummy chocolate cupcakes recipe. I love and enjoy making these cute chocolate cupcakes.actually I made 60 cupcakes for my nephew's first birthday and frosted with chocolate ganache frosting, thought to share recipe with you all. Everyone enjoyed these cupcakes at birthday party and liked them a lot.today I'm giving measurements for 12 cupcakes here. Making these cupcakes at home is pretty simple. You can have them without frosting also.

Ingredients : makes 10 to 12 cup cakes

All purpose flour/maida : 1 1/4 cup
Cocoa powder : 1/4 cup
Oil : 1/2 cup/100 ml
Large Eggs : 2
baking powder : 1 tea spoon
Baking soda/cooking soda : 1/4 tea spoon
milk : 1/3 cup
Powdered sugar : 1 cup
Vanilla essence : 1 tea spoon

My 1 cup measures 200ml

Method :

Take eggs in a bowl whisk them for few seconds then add sugar and whisk until frothy and changes into pale yellow color.

Now add oil and vanilla essence whisk for few seconds.

Now take a sieve add all dry ingredients sift it and add to egg mixture, mix gently without lumps by adding milk.

Now line muffin mold with paper cups fill mold upto 3/4.

Now bake in 180 degrees celsius for 15 minutes in preheated. (preheat oven in 180 degrees for 10 minutes)

Now let them cool completely and frost with prepared chocolate ganache and serve.


Take eggs in a bowl

Whisk for few seconds

Add powdered sugar

Whisk it well


Add oil

Add vanilla essence

Whisk it for few seconds

Now take a sieve add flour and cocoa powder

Add baking powder and baking soda

Sift it and add to egg mixture

Fold it gently

Add milk 

Mix without lumps

Now take lined muffin mold

Take a scoop of batter and fill the mold until 3/4


Bake them

Let it comes completely

Take your chocolate frosting (recipe here)

Take ganache in to a piping bag

Decorate as per your choice

DARK CHOCOLATE GANACHE FROSTING RECIPE


Dark chocolate ganache is a basic and easy to make icing recipe. Also this is my favorite icing for cakes and cup cakes. I don't like buttercream icing for my cakes and cupcakes. I mostly use whipped cream or chocolate ganache to decorate my cakes. They are pretty simple to make also very rich in taste.I have already shared chocolate ganache recipe in my rich chocolate cake.it was shiny and glossy ganache recipe. But this chocolate frosting can handle very easily. I used milk chocolate to make this recipe. You can also use dark chocolate.

Ingredients :

Dark chocolate/milk chocolate : 500 grams

Fresh cream : 250 grams (I used amul low fat cream)

Method :


First scrape chocolate with peeler or knife and make small pieces, take into a bowl.(chocolate should be at room temperature)

Now take cream in sauce pan heat on medium flame until it start bubbling. Remove from fire and pour this hot cream on chocolate.

Mix gently without lumps.if there are any chocolate pieces just melt in double boiler on medium flame for few seconds and remove from fire.

Now cover and refrigerate for 1 to 2 hours, after couple of hours it will get firm.frost your cakes or cup cakes.
Scrape chocolate with peeler or knife

Take it into a bowl

Take cream into a sauce pan

Heat on medium flame (don't over heat cream)

Pour this on chocolate

Mix it gently


Put this on double boiler, melt for few seconds

Now it's all melted

Cover and refrigerate for 2 hours

Use for icing cakes and cupcakes
