FALAFEL RECIPE/ARABIC DISH FALAFEL RECIPE


Falafel is a popular arabic dish. Deep fried balls or patty made from ground chick pea. Falafel is a traditional Egyptian and middle eastern street food commonly served in a pita bread or can make sandwich. Falafel may also be eaten Alone as snack or can be served as starter.

          actually this falafel tastes best with tahini sauce. But I served with tomato sauce which also tasted good. But will sure share tahini dip soon with you. You can easily make this recipe with easily available ingredients in your kitchen. Kids will definitely love them a lot.

Ingredients :

Chick peas : 1 cup
Garlic cloves : 5
cumin powder : 1 tea spoon
Coriander powder : 1 1/2 tea spoons
Chilly powder : 1 tea spoon
roughly chopped onions : 1
coriander leaves : 1 cup
Parsley : 1 cup
Salt to taste
Oil for deep frying

Method :

First soak and wash chick peas for 8 hours or overnight.

Now drain the water and add it to a blender. Blend it coarsely.

Now add all ingredients except oil and blend it into a coarse paste. (I used dried parsley, if you have fresh parsley please do add it)

Now make them into round balls or as per your choice.

Now drop them in hot oil and fry on both sides until they changes in to golden color and serve.

Note :

Add 2 tea spoons of rice flour for binding

Soak chick peas for overnight

Take them into a blender

Blend it coarsely

Add onion and garlic

Add coriander leaves

Add all spice powders

Add salt

Add parsley

Blend into coarse paste without adding water

Take this mixture into a bowl
Roll them into a shape

Drop them in hot oil



Fry on both sides until golden color

Take them into a plate



Serve hot!!!!

UMM ALI RECIPE / ARABIC DESSERT UMM ALI RECIPE



Umm ali is a arabic dessert made with puff pastry or croissants, milk, cream and lots of Dry fruits. It is similar to bread pudding but it is pure veg. It tastes really yummy when it is hot. I used my homemade puff pastry sheets in this recipe. If you find readymade croissants in your place then you can easily make them. The last option is bread. If you can't find puff pastry or croissants you can use bread slices as well.

Ingredients :

Puff pastry sheets : 250 grams (recipe here)
milk : 500 ml
Chopped nuts : 3/4 cup (I used pistachios, cashew nuts and almonds)
raisins : 1/4 cup
Condensed milk : 1/2 cup (recipe here)
Sugar : 1/2 cup or as per your taste
Cardamom powder or cinnamon powder : 1 tea spoon
fresh cream : 250 ml (I used amul fresh cream)
desiccated coconut : 1/2 cup (click here for recipe)

Method :

First bake puff pastry sheets in 200 degrees for 20 to 25 minutes or until top changes into golden color

Now take milk in a pan add sugar and 1/4 cup of condensed milk boil for 2 to 3 minutes

Now take cream and remaining condensed milk in a bowl mix it well and keep a side.

Now take oven proof baking dish break half of the puff pastry and make layer, then sprinkle some dry fruits and half of the desiccated coconut and pour boiled milk all over the dish

Now make another layer of all remaining ingredients (reserve some nuts for garnishing)

Pour cream and condensed milk mixture all over and bake for 10 to 15 minutes in 180 degrees in preheated oven (preheat oven in 180 degrees for 10 minutes)

Finally sprinkle some dry fruits on top and serve hot.
Bake puff pastry

Take milk in a pan add sugar

Add 1/4 cup of condensed milk

Mix it well

Let it boil for couple of minutes

Add cardamom powder then mix it

Add condensed milk to cream

Mix it well

Now it's time to assemble

Break half of the puff pastries in a baking dish

Spread them evenly

Sprinkle some dry fruits

Sprinkle desiccated coconut

Pour half of the milk all over the dish

Now make another layer of all ingredients



Pour remaining milk


Now spread cream and condensed milk mixture evenly

Now bake it

It's done now

Enjoy!!!!

AL KABSA RECIPE/ARABIC AL KABSA RECIPE


I wanted to try this recipe from quite long time.... One of my friend gave me this recipe who lives in Saudi.Finally I made this tasty al kabsa yesterday for lunch. Everyone loved it to the core. To make this recipe first of all you need Arabic spice mix. It is available in Big supermarkets but I like to make homemade Arabic spice mix. Fresh and pure. I'm going to show you that recipe too.

          Al kabsa is an Arabic dish. It is most popular dish in Arabic countries. This dish is made with big chicken pieces, lots of spices and basmati rice. Actually this dish calls for whole chicken which  cut Into 4 pieces but i prepared this dish with large leg pieces. Also this recipe calls for dried lemon but I didn't find dried lemon then I used lemon zest for flavor. Finally the outcome was superb!!!!!

Ingredients :

For Arabic spice mix :
cinnamon sticks/dalcheeni : 2 
cloves/loang/lavangaalu : 10
Cardamoms/elaichi/yalakulu : 5
Nutmeg/jayphal/jajikaya : 1
Coriander seeds : 1 table spoon
black pepper corns : 1 tea spoon
dried ginger/sonti : 1 inch piece
cumin seeds/jeera/jeelakara : 1 tea spoon

Whole garam masala :
Bay leaves : 2
cinnamon sticks : 2
Cardamom : 4
cloves : 5
Dried lemon : 1

For rice :
Almonds : 15 to 20
sultanas/raisins : 1/4 cup
Basmati : 750 grams
large chicken pieces : 1 kg
Chopped medium onions : 2
chopped medium tomatoes : 4
tomato paste : 1/2 cup
Garlic paste : 2 tea spoons
Grated large carrot : 1
oil : 1/2cup
Salt to taste
Oil/ghee : 2 table spoons

Method :

First take all Arabic spice ingredients into a pan dry roast for 2 to 3 minutes. let it cool completely and blend into a fine powder.

Wash and soak rice for 30 minutes.

Soak almonds In hot water for 10 to 15 minutes. Then Peel the skin and cut into halves.

Now heat oil add onions saute for few seconds then add garlic paste saute for few seconds

Now add chicken pieces and whole garam masala saute for few minutes

Now add arabic spice mix saute for few seconds then add salt

Now add tomato paste and chopped tomatoes saute for 2 minutes.

Now pour 1 1/2 litre + 1 cup of water and cook till chicken gets tender (add some more water if required)

Now take out the chicken pieces and arrange in baking tray and broil for 10 minutes in 250 degrees or you can shallow fry in pan

Now add soaked rice and grated carrots to the vessel and cook on high flame for 10 minutes then cook on low flame for 5 to 10 minutes by covering with cloth and remove from fire.

Now add oil/ghee to a pan fry almonds and sultanas  and take them into a plate.

Now take rice into a Big serving plate arrange baked or fried chicken pieces on rice then sprinkle fried almonds and sultanas and serve.

Take all Arabic spice mix powder


Add them to a pan

Add cumin seeds and dry roast for few minutes

Now take them to a blender

Blend into a fine powder

Soak almonds in hot water

Peel the skin and cut them 

Heat oil add onions and saute it

Add garlic paste

Saute for few minutes

Then add chicken

Whole garam masala

Saute for couple of minutes

Add blended spice mix

Add salt and saute for 1 minute

Add tomatoes

Add tomato paste saute for few minutes

Pour water

Cook on high flame until chicken gets tender

Fry almonds and take them into a pan

Add sultanas

Saute for few seconds and take them into a plate

Now take out chicken pieces


Broil them

Or fry in a pan 

Now add soaked rice

Grated carrots

Mix it well

Cook on high flame for 10 minutes

Now cover with cloth and close the lid and cook on low flame for 5 to 10 minutes

Mix it gently

Rice is well cooked now

Take rice into a plate arrange chicken pieces on top

Sprinkle fried almonds and sultanas

Now it is ready to serve!!!!


Serve hot!!!
