MATKA KULFI RECIPE/POT KULFI RECIPE



Matka kulfi is an Indian dessert traditionally served in earth pots. Kulfi is an Indian ice cream which is made with whole milk and nuts, flavored with cardamoms. There are many types of kulfi. I have already shared malai kulfi recipe here. Today I'm going to share traditional matka kulfi recipe. Which tastes so delicious in this summer. I request you to try this recipe atleast once. I'm sure Your family will definitely like it. You need some small earthen pots to set kulfi, which are easily available In market. If you don't have matka (clay pot) at your home you can set them in any kulfi moulds or popsicle moulds.

Ingredients :


Full fat milk : 1 1/2 liters
Sugar : 1/3 cup or as per your taste
Cardamom powder : 1 tea spoon
Thinly sliced nuts : 1/4 cup (I used almonds,cashew nuts and pistachios)

Method :


First take milk in pan and put on heat.

Start stirring constantly for 10 to 15 minutes.

Now add sliced nuts, reserve some for garnishing.

Now stir continuously until milk reduces to half, then add sugar (you can adjust sugar as per your taste)

Stir continuously until milk reduces to 1/3 quantity.

Now remove from fire and let it cool completely.

Now pour them into earthen pots and cover with aluminum foil or cling wrap.

Freeze it for over night and serve.

Note :

Servings for this recipe depends upon the size of matka. My matka size is 300 ml each. You can choose small size clay pots for more servings.

Take milk in a pan

Stir continuously for 10 to 15 minutes

Stir,Stir, stir

Add cardamom powder

Stir until milk reduces to 1/3 quantity then remove from fire

Let it cool completely

Now take your clay pots

Fill with kulfi mixture

Cover with aluminum foil or cling wrap and freeze it for overnight

Now they are ready

Garnish with some sliced nuts


Yummy matka kulfi is ready!!!!

NO CHURN MANGO ICE CREAM RECIPE



Mango ice cream is one of my favorite ice cream. I was waiting for mango season from quite long time to share this recipe with you all. This recipe needs just 3 ingredients to make yummy mango ice cream at home. You don't need to blend ice cream again and again to make smooth texture for this recipe.you can also use some yellow food color and mango essence.I used non dairy whipping cream in this recipe,if you can't find whipping cream in your place then you can use fresh cream,but take 300 ml to 350 ml of fresh cream. I have already shared some homemade ice cream recipes in my blog, you check that recipes too.

Ingredients :


Mango pulp : 2 cups /400 ml
Whipping cream : 250 ml
Condensed milk : 250 ml (recipe here)

Method :


Peel and chop 2 medium size mangoes and blend into a puree. You can also use store bought pulp.

Now take whipping cream in bowl, whip until it reaches to stiff peaks.

Now add condensed milk and mango puree whip it until all ingredients are well combined.

Now pour this mixture to an freezer safe container, cover with cling wrap (this is optional) and put the lid.

Now freeze it for 6 to 8 hours or overnight.

Now take ice cream from freezer, it will be hard little bit,so just set a side for 1 to 2 minutes, scoop it and serve.

Note :


You can adjust sweetness as per your taste by adding more condensed milk.

After adding pulp to whipping cream, it may become runny, no problem you just continue the process.

Take them into a blender

Blend into a fine puree

Now take whipping cream in a bowl

Whip until it reaches to stiff peaks

Now add condensed milk

Add mango puree

Whip it well

Transfer this mixture to a freezer safe container

Cover with cling wrap,make sure it should touch to the ice cream

Now cover with lid and freeze it for 6 to 8 hours or overnight

Now it's done

Scoop it

Serve!!!!!

HOMEMADE COFFEE ICE CREAM RECIPE



Have you ever tried coffee ice cream at home???? If your answer is no, then try this yummy and creamy coffee ice cream at home and enjoy this summer with yummy homemade coffee ice cream with your friends and family. You need very few ingredientsto make this ice cream which are easily available ingredients in your kitchen. At first I wanted to try coffee ice cream with whipping cream,but whipping cream is not available for everyone. So I decided to make an easy ice cream with easily available ingredients, so that everyone can make at home. I used egg yolks in this recipe which gives a creamy texture to your ice cream. Trust me you will not find any egg smell in your ice cream.

Ingredients :


Full fat milk : 1 liter
Large egg yolks : 6
Sugar : 1 cup/200 grams or as per your taste
Fresh cream or malai : 1/2 cup
Instant coffee powder : 2 table spoons

Method :


First take egg yolks in a bowl and whisk it for few seconds then, add sugar and whisk it well for 5 minutes or until it changes into pale yellow color.

Now take milk and cream in a pan, when it starts bubbling, add coffee powder and mix it well.

Now take one cup of coffee mixture and slowly add to egg yolk mixture and whisk it well until forthy.

Now slowly add egg mixture to milk mixture and stir constantly on low heat for 4 to 5 minutes or until mixture turns thick.

Now remove from heat and strain the mixture into a freezer safe container, let it cool completely.

Now freeze it for 6 to 8 hours by covering the lid.

Now take frozen ice cream into a blender and blend into a smooth paste and transfer this mixture to same container.

Now freeze it for 6 to 8 hours, scoop and serve.

Note : you can repeat blending process 1 more time for more creamy texture.

Take egg yolks in a bowl

Add sugar

Whisk it for 5 minutes

Now take milk and cream in a pan and heat it on medium flame

When milk starts bubbling add coffee powder

Now mix it well

Now take one cup of coffee mixture and slowly add egg to egg  mixture by whisking continuously

Whisk it well until frothy

Now slowly pour egg mixture to coffee mixture and stir it continuously to avoid cuddling


Stir continuously on low flame for 4 to 5 minutes or until mixture thickens

If you swipe your finger on spatula, the line should stay, this is the right consistency

Now strain the mixture into a freezer safe container

Let it cool completely,cover the lid and freeze it for 6 to 8 hours

Now it's frozen

Take this into a blender

Blend into a smooth paste

Now transfer this to a container

Freeze it for another 6 to 8 hours

Scoop and serve

Yummy coffee ice cream is ready!!!!
