MATKA KULFI RECIPE/POT KULFI RECIPE



Matka kulfi is an Indian dessert traditionally served in earth pots. Kulfi is an Indian ice cream which is made with whole milk and nuts, flavored with cardamoms. There are many types of kulfi. I have already shared malai kulfi recipe here. Today I'm going to share traditional matka kulfi recipe. Which tastes so delicious in this summer. I request you to try this recipe atleast once. I'm sure Your family will definitely like it. You need some small earthen pots to set kulfi, which are easily available In market. If you don't have matka (clay pot) at your home you can set them in any kulfi moulds or popsicle moulds.

Ingredients :


Full fat milk : 1 1/2 liters
Sugar : 1/3 cup or as per your taste
Cardamom powder : 1 tea spoon
Thinly sliced nuts : 1/4 cup (I used almonds,cashew nuts and pistachios)

Method :


First take milk in pan and put on heat.

Start stirring constantly for 10 to 15 minutes.

Now add sliced nuts, reserve some for garnishing.

Now stir continuously until milk reduces to half, then add sugar (you can adjust sugar as per your taste)

Stir continuously until milk reduces to 1/3 quantity.

Now remove from fire and let it cool completely.

Now pour them into earthen pots and cover with aluminum foil or cling wrap.

Freeze it for over night and serve.

Note :

Servings for this recipe depends upon the size of matka. My matka size is 300 ml each. You can choose small size clay pots for more servings.

Add cardamom powder

Now take your clay pots

Fill with kulfi mixture

Cover with aluminum foil or cling wrap and freeze it for overnight

Now they are ready

Garnish with some sliced nuts


Yummy matka kulfi is ready!!!!

FRUIT CUSTARD RECIPE



Fruit custard is an easy to make dessert with simple ingredients.my kids love this fruit custard a lot, specially in summer. I often make fruit custard at home with different varieties of fruits which are available in season. It is not also tasty but also a healthy dessert.You can also serve fruit custard with jelly. It also tastes so good. You can add any fruits of your choice. But make sure to serve chilled fruit custard.

Ingredients :

Custard powder : 5 table spoons
Milk : 1 liter
Sugar : 100 grams or as per your taste
Mango : 1
Pomegranate : 1
Apple : 1
Bananas : 2
Sultanas for garnishing (optional)

You can add fruits any of your choice and quantity of fruits are up to you.

Method :


Take 100 ml of milk in a bowl add custard powder and mix it well without lumps and keep a side.

Now boil milk and add sugar,stir it well util sugar dissolves completely.

Now add custard mixture slowly by stirring constantly on low flame until mixture thickens.

Now remove from fire and let it cool completely.

Now take your fruits, chop them and keep a side.

Now take cooled custard in a bowl,add chopped fruits and mix it well.

Refrigerate for 2 hours and serve chilled.

Take 100 ml of milk in a bowl add custard powder

Mix without lumps

Boil remaining milk

Now add sugar to boiling milk

Stir until sugar dissolves completely

Now add custard mixture by stirring constantly

Stir without lumps on low flame

Cook until mixture thickens

Now remove from fire and let it cool completely

Now take your fruits

Chop them well

Now take cooled custard into a bowl

Add chopped fruits

Mix and refrigerate for couple of hours

Serve

DAHI BHALLA RECIPE/DAHI VADA RECIPE



Dahi bhalle is a famous Indian chat. Dahi bhalle are made with urad dal vade soaked in hot Water and then topped with yogurt, green chutney,sweet chutney and black salt with some other ingredients. It is a perfect treat for chat lovers. You can serve them as a starters in parties or in dinner. I have already shared south Indian style dahi vada recipe Here. And today I'm going to share north Indian version of dahi vada. It is also called as dahi bhalla and dahi vade. I love this north Indian version a lot. Topping with Green chutney and sweet chutney is very important for this both chutneies gives extra taste and flavor to your dish.

Ingredients :

For vada batter :

Urad dal/white lentils/minapappu : 200 grams
Salt to taste
Soda bicarbonate : 1 Pinch

Oil for deep frying

For topping :

Curd/yogurt : 500 to 600 ml
Green chutney : as needed(recipe here)
Sweet tamarind chutney : as needed(recipe here)
Salt to taste
Black salt or chat masala : as needed
Khara sev/vam podi : for topping
Chilly powder : as needed
Chopped coriander leaves : as needed

I have not given exact topping measurements,you can top above ingredients as per your taste


Method :


First start making vada, wash and soak dal for 3 to 4 hours, drain the water and take dal into a blender.

Now add salt and soda bicarbonate and blend into a paste by adding little water.

Now Take batter into a bowl and beat it well with your hands for 5 to 10 minutes. If you drop some batter in water, it should float on top.

Now heat oil in a pan and drop batter as pakoda.

Now fry them until they changes into golden color.

Now boil 1 to 1 1/2 liters of water by adding some salt, remove from fire and drop fried vade in hot Water, soak them for 1 to 2 hours.

Now take soaked vada, gently squeeze the water and arrange them in a bowl.

Now take curd and whisk it well or just blend for few seconds by adding some salt.

Now pour this curd over the vade, top with green chutney,sweet chutney, sprinkle some black salt or chat masala,chilly powder,khara sev and coriander leaves and serve.

Transfer batter into a bowl and beat it well for 5 to 10 minutes

If you drop some batter in water,it should float on top

Now drop batter in oil and make vade


Fry until they changes into golden color

Take water in a vessel and add salt

Boil it and remove from fire

Now soak fried vade in water for 1 to 2 hours

Now gently squeeze water and keep a side

Now beat curd until smooth consistency

Arrange vade in serving dish

Pour curd over it

Top with green chutney

Top with sweet chutney

Sprinkle some chat masala or black salt

Sprinkle some chilly powder

Top with khara sev and coriander leaves

Serve

Chat pate dahi bhalle is ready
