NO BAKE STRAWBERRY CHEESECAKE RECIPE



Cheesecakes are the very creamy and tasty desserts which we can easily available ingredients. Especially this strawberry cheesecake tastes absolutely delicious. So creamy and yummy!!!!! But we can't find cream cheese in many places. So some people may think this recipe is not for us. Then you are mistaken, here is a great substitute for cream cheese that is hung curd. Yes, you can make this yummy strawberry cheesecake with unsour hung curd. You can also use my homemade cream cheese.


This is a three layered cheesecake.bottom layer is butter and biscuit, middle layer is cheese cake  and top layer is yummy strawberry jelly. Though it sounds long process, but it completely worth it. You can even use 250 grams of cream cheese instead of hung curd.

Ingredients :

For base :

Any biscuits : 200 grams (I used milk bikies)
Melted butter : 3/4 cup

For cheesecake :

cream cheese or hung curd : 250 grams
gelatin : 2 tea spoon or agar agar : 10 grams
whipping cream : 250 ml
Vanilla or strawberry essence : 1 tea spoon
Icing sugar/powdered Sugar : 1 cup/120 grams

For strawberry jelly :

Fresh or frozen strawberries : 8 to 10
gelatin : 1 1/2 tea spoon
Sugar : 1/3 cup or as per your taste
water : 1/2 cup

Method :

1) First to make hung curd, take unsour 500 to 600 grams of curd,line a sieve with muslin cloth and put this over a bowl, now add curd to it and tie it. Put this in refrigerator overnight. That's it your hung curd is ready.

2)Now soak gelatin in some water for 10 minutes and set a side.

 3)crush biscuits and take them into a blender or food processor, blend into coarse powder.

4)Now add melted butter and mix it well with your hands.

5)Now take 6 inch spring form mould and spread this mixture evenly and press it well. Now set this in refrigerator for 10 to 15 minutes. (if you don't have spring form mould, line regular cake mould with aluminum foil or cling wrap, all over the mould).

6) now take whipping cream in a bowl, whip until it reaches to stiff peaks. Then keep this a side.

7)Now to make cheese cake, take hung curd or creamcheese in a bowl,add icing sugar and whip it until well combined.

8)now melt gelatin on low flame gently and add this to creamcheese mixture and whip it well.

9) now add essence and whipped cream and whisk it for 30 second or every thing is well combined.

10) now take this mixture into a mould and spread it evenly, then put this in refrigerator until we prepare strawberry jelly.

11) now to make strawberry jelly, first follow the second step.

12) now take chopped strawberries and sugar, blend into a puree and take it into a pan.

13) now cook this on low flame for 1 minute, then add bloomed gelatin.stir it gently on low flame until gelatin gets dissolves.then immediately remove from fire.

14) now bring this mixture to Luke warm temperature and pour this over cheesecake mixture.

15) now chill it in refrigerator for over night, gently run a knife around the cake, demold and enjoy!!!!!






To make hung curd Put a sieve on bowl

Line with muslin cloth and pour 500 to 600 grams of unsour curd.  (if you are using creamcheese you can skip this step)

Tie it

Put this in refrigerator for overnight

Now your hung curd is ready, keep this a side

Now take some crushed biscuits into a blender

Blend it into a powder

Add melted butter

Mix it well with your hands


Now spread it evenly and press it well in 6 inch spring form mould

Refrigerate for 10 to 15 minutes

Now take some gelatin in a bowl

Add some water,mix it well and set a side

Now take whipping cream, whip until it reaches to stiff peaks

Now take cream cheese or hung curd in a bowl,add icing sugar

Whip it well

Now gelatin has bloomed

Take this into a pan

Melt it on low flame and remove from fire

Now add some essence

Add melted gelatin

Whip it well

Now add whipped cream

Whip it well until everything is well combined

Now take this mixture into a mould

Spread it evenly

Put this in refrigerator until we prepare glaze

Now to prepare strawberry jelly, take sugar and strawberries in a blender

Blend it into a puree

Put this on low heat and cook for 1 minute by stirring continuously

Now add bloomed gelatin (follow step 2 in written part to bloom gelatin)

Stir it gently until gelatin melts

Immediately remove from fire and let it cool for some time

Now pour this over cheesecake

Refrigerate for overnight to set it well

Now it's done

Run a knife around the mould

Demold gently

Looking so pretty!!!!!


Slice it and serve!!!!

JAPANESE COTTON CHEESE CAKE RECIPE



HI.... Today I'm going to share a yummy Japanese cotton cheesecake recipe. I found this recipe from Facebook page.Then I immediately wanted to try this recipe, I have all ingredients in my hand and made this super soft cotton cheese cake and the result was awesome. My kids really enjoyed it so much. Then I shared some cake with my neighbor's kids they praised me a lot!!!!!! She told " aunty...this is the best cheese cake I ever had" wow!!!! I felt really really happy when I heard those words from her. You should definitely try this recipe atleast one time. I used my homemade cream cheese in this recipe (recipe here).

Ingredients :

Cream cheese : 250 grams/1 1/4 cup(recipe here)
Powdered sugar : 1 cup (150grams)
milk : 150 ml
Butter : 1/2 cup /80 grams
eggs : 4
corn flour : 2 table spoons
all purpose flour/Maida : 1/4 cup
Vinegar : 1 tea spoon
vanilla essence : 1 1/2 tea spoon

My one cup measures : 200ml

Method :

First bring all ingredients to room temperature

Line your 6 or 7 inch cake tin with parchment paper.

Now separate egg whites and yolks

Now take cream cheese in a bowl add 1/2 cup of powdered sugar, milk and butter whisk it well

Now put this on double boiler stir it for few seconds then remove from double boiler.

Now take a clean and dry bowl add egg whites and beat it For few minutes then gradually add powdered sugar and vinegar and beat it till it gets to stiff peaks

Now take cream cheese mixture add flour and corn flour whisk It well with out lumps then add vanilla and mix it well

Now add egg yolks and whisk it well and strain it in strainer

Now gradually fold egg whites mixture to cream cheese mixture and mix it gently with cut and fold method.

Now pour this mixture to lined cake tin.

Now pour hot water in baking tray and place this cake tin gently in it.

Now bake  for 50 to 60 minutes in 165 to 175 degrees in preheated oven. (preheat oven in 175 degrees for 10 minutes.

Now insert tooth pic or knife if it comes out clean your cotton cheesecake cake is ready.

Now put this in refrigerator for overnight and serve.

NOTE : line the parchment paper as shown in the picture.

It will raise above the pan and when it cool downs cake will shrink, so don't panic at this moment.



Line Cake tin with parchment paper

Divide egg whites and yolks

Take cream cheese  in a bowl add 1/2 of the powdered sugar

Add butter

Pour milk

Whisk it well

Put this bowl on double boiler stir for few seconds

Take egg whites beat them well

Add powdered sugar gradually

Beat it well

Add vinegar

Beat till it gets to stiff peaks

Now take cream cheese mixture add maida

Add corn flour

Mix it without lumps

Add vanilla essence

Mix it well

Add egg yolks

Whisk it well

Stain the cream cheese mixture


Add egg whites gradually and fold it


Fold it gently

Pour this mixture to lined cake tin


Pour hot water in baking tray

Place this cake tin in baking tray

Put in oven carefully

Bake it

Insert toothpick or knife

If it comes out clean your cake is done

Remove parchment paper and refrigerate for overnight


Yummy cotton cheesecake is ready to serve!!!!
