EGG WRAP/KOLKATA EGG ROLL RECIPE


Egg roll is a popular street food in Kolkata. Roti or chapathi coated with egg and loaded with fresh veggies and sauces then wrapped in parchment paper or aluminum foil. Making this egg  roll is pretty simple. If you have leftover chapathi then you can easily make them.Tastes really , really awesome. I really love this egg roll a lot. Infact these egg rolls became my favorite snack. Infact kids love them a lot.

      I highly recommend you to try this recipe atleast once. You can serve this in breakfast, in tea time or any time .
You need just handful of ingredients to make this recipe.

Ingredients :

All purpose flour/maida : 2 cups (I used half Maida and half wheat flour)
eggs : 4 to 5
tomato sauce : 1 tea spoon per roll
Green chilly sauce : 1/2 tea spoon
chat masala as per your taste
oil : as needed
Finely sliced cucumber : 1
finely sliced carrot : 1
finely sliced onions : 2 (Medium)
Salt to taste

Method :

First take flour add salt mix well. Add water and knead as chapathi dough and rest it for 10 to 15 minutes.

Now divide dough into equal portions roll into chapathi and put it on hot pan fry on both sides and take into a plate

Now add tea spoon of oil beat one egg by adding pinch of salt and add this to hot pan and spread it evenly

Now put chapathi on egg and cook on medium flame for few seconds roast it well and take into a plate

Now put veggies in middle top with chilly sauce and tomato sauce sprinkle some chat masala roll it and wrap in parchment paper and serve.

Note : You can use tomato sauce and chilly sauce as per your taste

You can add veggies as per your taste. So, I have not given correct measurements.

You can also add chopped green chillies and sprinkle some lemon juice if you are not giving to your kids.

Take flour and salt mix it

Make a soft dough

Spread some oil and roll into chapathi


Heat pan, place chapathi


Fry on both sides by adding oil and take into a plate

Beat an egg


Add to hot pan and spread it

Place chapathi on top

Roast on both sides by adding oil

Take this into plate

Take veggies

Place them in middle

Top with  tomato sauce

Top with chilly sauce

Sprinkle chat masala

Roll it tightly


Wrap with parchment paper and serve

Yummy egg roll is ready!!!!!

aloo masala for poori and chapathi/aloo curry recipe (hotel style


This aloo curry is perfect for poori and chapathi. It tastes exactly as hotel ones which served with poori. As I promised yesterday here I'm sharing this yummy dish. Making this dish is so simple and easy. If you have boiled potatoes in your hand then everything will be done in 5 to 8 minutes.you can also use this curry for masala dosa.

Ingredients :

Boiled potatoes : 250 grams
sliced medium onions : 4
small chopped tomato : 1
Chopped green chilly : 2
curry leaves : 2 strings
oil : 1 table spoon
turmeric powder : 1/2 tea spoon
Salt to taste
coriander leaves : 2 strings
Mustard seeds : 1 tea spoon
chana dal/chanaga pappu : 2 tea spoons

Method :

First take boiled and peeled potatoes coarsely mash them and keep it a side.

Now heat oil in a pan add mustard seeds and chana dal, then add onions, green chillies and curry leaves saute for 45 seconds to 1 minute.

Now add chopped tomato, salt and turmeric powder saute for few seconds then add 1 cup of water let it boil then add mashed potatoes cover and cook until water dries finally add coriander leaves and serve.
Coarsely mash potatoes

Heat oil and add mustard seeds and chana dal

Add onions,curry leaves and chillies saute for few seconds

Add tomatoes saute for few seconds


Add turmeric powder and stir it

Add water

Add mashed potatoes

Mix it well

Cover and cook

Cook until gravy becomes thick, finally add coriander leaves

Remove from fire and serve


Yummy potato masala is ready

poori recipe/ puri recipe


Back to cooking for beginners series. Today I'm going to show you perfect poori recipe specially for beginners in cooking. I love to make and eat pooris so much.  to maintain my weight I prepare monthly once hence it is deep fried in oil.This is my version of making pooris. I take equal quantity of wheat flour and Maida also I add some soji/rava for crispness and to maintain the puffiness. It tastes so good with potato masala. Will post that recipe after this post.

 ingredients :

Wheat flour : 1 cup
Maida : 1 cup
Soji/upma rava/semolina : 1/4 cup
Salt to taste

Oil for deep frying

Method :

First take all dry ingredients into a bowl mix it well then add water little by little,knead into a soft dough, cover with lid and rest it for 30 minutes.

Now divide dough into small portions. Roll them and drop in hot oil. Press on top with spatula, so that it will puff up. Fry on both sides till golden color,take into a plate and serve hot.

Note : oil should be in medium heat while dropping poori.
Take all dry ingredients in a bowl

Mix it well

Add water little by little

Knead into a soft dough and rest it for a while.

Take small portion of dough

Roll a small poori

Drop in hot oil

Press on top until it puff up

Fry on medium heat until it changes into golden color

Fry on both sides

Drain the excess oil and take into a plate

Serve hot!!!!
