Easy carrot halwa recipe/pressure cooker gajar ka halwa recipe



Halwas are my all time favorite desserts. I enjoy making different types of halwa at home. But in my opinion carrot halwa and Karachi halwa are the very popular sweets in India. I have already shared carrot halwa recipe which is cooked in kadhai here. Today I'm going to share easy pressure cooker version of carrot halwa which tastes so delicious. So, let's get started.....


Servings : 4 to 5


Ingredients :


Carrots : 500 grams
Cashewnuts and almonds : 10 each (sliced)
Cardamom powder : 1/2 tea spoon
Sugar : 250 to 300 grams or as per your taste
Milk : 500 ml
Condensed milk : 1/2 cup
Ghee : 1/3 cup/75ml

Method :


First peel and grate carrots well and keep a side.

Now heat ghee in a pressure cooker,add nuts and fry until they changes into golden color and take into a plate.

Now add grated carrots and saute for 5 minutes or until raw flavors disappear.

Now add milk and mix it well, put the pressure cooker lid and cook for 2 to 3 whistles and remove from fire.

Now let all the pressure goes out. Remove the lid carefully and put on fire.

Now add sugar and stir constantly until Sugar melts and water gets dry. 

Finally add fried nuts,cardamom powder and condensed milk, pour some ghee on top, stir it for 2 to 3 minutes and remove from fire.

Grate carrots well

Heat ghee in a pressure cooker add nuts

Fry until they changes into golden and take into a plate

Now add grated carrots

Saute for 5 minutes


Pour milk and mix it well

Put the pressure cooker lid and cook for 2 to 3 whistles

Now let the pressure goes out and carefully remove the lid

There is still some milk, stir it well

Add sugar and cook it well

Add cardamom powder

Stir constantly until water dries
Finally add fried nuts

Saute for few minutes and remove from fire

LEMON RICE RECIPE/CHITRANNAM RECIPE


Lemon rice is also called chitrannam,nimmakaya annam and nimmakaya pulihora in telugu. It is quite famous dish in south india. Lemon rice can be easily prepared within 5 minutes. But you should have cooked and cooled rice in your hand. It tastes best with any veg fries, appadam(papad) and vada. I always serve with minapa vada(medu vada) my family loves this combo.

        I wanted share this easy recipe from quite long time. But this is so quick and easy recipe which I always make in a hurry and don't have time to take pictures. But last Sunday finally I got some time to take pictures. I always prepare this rice with leftover rice. If you want to prepare with fresh rice, then cook rice  2 to 3 hours early and let it cool completely.

Servings : 2 to 3


Ingredients :


Cooked rice : 2 cups
Medium size lemon : 2 or as required
Pea nuts or cashews : 1/4 cup
Dried Red chillies : 2
Mustard seeds/aavaalu : 1 tea spoon
Chana dal/Bengal gram/chanaga pappu : 2 tea spoons
Curry leaves : 2 strings
Oil : 2 table spoons
Turmeric powder : 1/2 tea spoon
Salt to taste

Method :


First heat oil in a pan, add mustard seeds, let them crackle. Then add chana dal and pea nuts,fry for few seconds.

Now add chillies and curry leaves, saute for few seconds and then add Turmeric powder,stir it.

Now add lemon juice and salt give it fast stir and add cooked rice.

Saute for 2 to 3 minutes and switch off the flame and serve.

Take cooked and cooled rice

Heat oil in a pan and add mustard seeds

Add chana dal

Add peanuts

Fry until they changes into light golden color

Now add chillies

Add curry leaves and stir it

Now add turmeric powder

Add lemon juice

Immediately add salt

Add rice

Saute for 2 to 3 minutes and remove from fire


Serve

Yummy lemon rice is ready!!!!!

MUSHROOM SOUP RECIPE/CREAM OF MUSHROOM RECIPE


Cream of mushroom soup is an easy quick soup recipe. I prepared this tasty mushroom couple of days back, though it was my first try turned out to be so delicious. Do you know I had two bowls of soup at a time. Now can imagine the taste. Rida and jasra also loved it to the core. You just need few. Simple ingredients which are available in your kitchen. I have added thyme in this recipe for a good aroma. If you don't have thyme you can just skip it.

Servings : 3 to 4


Ingredients :


Mushrooms : 200 grams
Medium onion : 1
Garlic cloves : 5
Pepper powder : 1/2 tea spoon
Thyme : 1/2 tea spoon
Salt to taste
Butter : 2 tea spoons
All purpose flour/maida : 2 tea spoons
Bay leaf : 1
Milk : 1 cup/250ml

Method :


First wash mushrooms well and slice them. Chop onions and garlic.

Now heat butter in a pan,add bay leaf and add onions and garlic?saute for 2 minutes.

Now add mushrooms and saute well on medium to High flame until water dries.

Now add pepper powder,salt and thyme,stir it well.

Now add flour and stir it until raw flavors disappear.

Now add 2 cups of water(around 400 ml)

Now add milk and stir it well. Cook on high flame for 4 to 5 minutes and takeout the bay leaf.

Now take 1 cup of soup mixture and blend into a puree.add to soup mixture.

Cook for 2 minutes and remove from fire and serve hot.

Slice and Chop your veggies

Add butter to a pan

Add bay leaf

Now add onions and garlic

Saute for couple of minutes

Add sliced Mushrooms and stir it well

Add salt

Add thyme

Add pepper powder 

Saute well

Add all purpose flour

Saute for few minutes

Add water

Pour milk

Mix it well

Boil for few minutes

Takeout the bay leaf

Take one cup of soup mixture

Blend into puree

Add to soup mixture

Cook for few minutes

Switch off the flame

Serve.
